View Full Version : Can we do lunch ideas again?
Or can somebody find me a link to ones we've done in the past? :lol: I couldn't find anything, but wasn't too clear-headed while searching.
I am in such a lunch rut and am tired of the sighs, half-hearted "okay"s and out right groans I get when I announce what's for lunch each day. :rolleyes:
We do the usual of sandwiches of all kinds, chicken wraps, hot dogs, mac and cheese, etc., but I'm needing some new stuff. Dd1 is the only one of the kids who will eat soup (other than chili). Cooking is not #1 on my list of fun stuff to do, so anything easy is great. I'll save the time-takers for dinners.

Pizza pockets, bagels, bagel bites. Little bits of everything is what ds1 likes. Sliced pepperoni, crackers, veggies/dip, pickles, cheese then he can pick what he likes each day. He takes a ceasar salad in a salad blaster which is great. I hear ya on the groans and sighs. I find the last part of the school year impossible to please them.

Just a few idea's...
Chocolate chip pancakes
French toast
Hamburgers
Hotdogs or
Hot dog rollups (recipe posted below)
Corn dogs
Chicken nuggets
Grilled cheese sandwiches
Taco’s
Sloppy Joe’s
Cheese and Wiener Burritos (recipe posted below)
Trail Blazers Wrap (recipe posted below)
Quick Quesadillas (recipe posted below)
Hot Dog rollups
Ingredients:
1 package of hot dogs
1 can crescent rolls
Directions:
Unroll crescent rolls one at a time. Roll the crescent roll around a hot dog and place on baking sheet. Bake according to directions on crescent roll container.
Weird Waffles:
Heat frozen waffles and make a sandwich with them, using peanut butter and jelly. Or cut them into bite-sized pieces or sticks and send syrup for dipping.
Quick Quesadilla
Ingredients:
Soft Taco size flour tortillas
1 can of refried beans
Shredded Cheddar and Jack cheese
Directions:
Spread a spoonful of refried beans on each tortilla. Sprinkle with shredded cheese. Place under the broiler or in a toaster oven until cheese is bubbly. Cut wedges with a pizza cutter.
Trail Blazers Wrap
Ingredients:
Peanut butter
Honey
1 banana, sliced
1/4 cup yogurt
1 cup granola
Flour tortillas
Directions:
Spread peanut butter over two tortillas. Drizzle honey over peanut butter to taste. In bowl, mix together 1 sliced banana, 1/4 cup vanilla or banana yogurt and 1 cup granola. Divide mix between tortillas, wrap, and eat.
Cheese and Wiener Burritos
Ingredients:
8 flour tortillas
8 hot dogs/meat wieners
8 ounces shredded Cheddar cheese
1/2 cup ketchup or taco sauce
Directions:
Heat wieners as directed on package. Heat tortillas. Place 1 hot wiener on lower third of each tortilla. Sprinkle each wiener with 1/4 cup of the cheese, and about 1 tablespoon ketchup or taco sauce. Fold in sides and roll up.

Great ideas, Diane. Ds2 loves hotdogs so I am going to try some of those.
I do freeze pancakes when I make them and then just take out as needed. Haven't in a while, thanks for the reminder.

Sometimes I do plain cheese tortillas for dks. Just use 2 flour shells, sprinkle cheese btwn them and either micro them briefly on a plate or warm them on the stove until the shells are lightly browned and cheese is melted. My dks dip them in salsa and love 'em.
