What kind?
Think we are cleaning out the fridge...so, chicken spaghetti, pork tenderloin, salad, brocolli, spinach...........

Spinach and artichoke dip
1 ½ cups sour cream
1 cup mayonnaise
1 (10 oz) pkg frozen, chopped spinach, thawed and drained
1 (6 oz) jar artichoke hearts, drained and mashed
1 ½ cups shredded parmesan/mozzarella cheese blend, divided
1 ½ tsp onion powder
1 tsp garlic powder
salt and pepper to taste
Mix all ingredients, using 1 cup of the cheese. Pour into ungreased 8-inch casserole dish. Top with remaining ½ cup cheese and bake at 350ºF for 45-60 minutes. Serve warm with tortilla chips.
Southern “crab cakes”
2 -12 oz cans crab meat
1 cup mayonnaise
½ cup shredded Swiss cheese
¼ cup shredded Parmesan cheese
½ cup chopped green onion tops
salt and pepper to taste
1 (12 oz) pkg English muffins
Preheat oven to 375ºF. In a medium bowl, combine crab meat, mayonnaise, onions, cheeses and salt and pepper. Open English muffins and place cut side up on ungreased baking sheet. Spread crab mixture onto muffin halves. Cut muffins into quarters and bake 12-15 minutes or until golden brown.
Vegetable Squares
2 packages Crescent Rolls
2 (8 oz) cream cheese
1 package Hidden Valley Ranch dressing mix
¾ cup Hellmann’s mayonnaise
Finely chopped veggies..your choice (carrots, broccoli, radish, squash ect)
Press crescent rolls to line a cookie sheet. BChicken Taco Dip
3 large cans of white meat chicken, drained
1 package taco seasoning mix
8 oz. sour cream
Mexican shredded cheese
In a skillet, add 1 tbsp water and 2 tbsp water, add chicken and taco seasoning and simmer about 10 minutes on medium high heat. Combine chicken and remaining ingredients (I use about a cup to a cup and a half of cheese), mix well and spread into a 9x13" casserole dish, top with more shredded cheese and bake at 400 degrees for 15 minutes or until heated through. Serve with tortilla chips.
*you can also stir in a jar of salsa for extra flavor
Quiche squares
2 eggs
6 slices bacon, cooked and crumbled
1/3 cup milk
2 tbsp chopped onion
2 tbsp flour
½ tsp salt
½ lb shredded Swiss cheese
½ lb shredded Monterrey or Colby Jack cheese
bacon, cooked and crumbled
salt and pepper to taste
Beat eggs well, add flour, salt, pepper, bacon, onion and milk and stir well. Add cheeses and pour into greased 8x10 baking dish. Bake at 350ºF for 30 minutes or until top is golden brown. Allow to cool, then cut into squares before serving.

Heading home from work in about 10 minutes. Don't know yet what I'm having since I have no clue what dh has taken our of the freezer, however, I do know that I'll also be enjoying a nice chilled glass of Pinot Grigio dh gave me for Valentine's Day. Ahhhh

Have to pick up party decor now that dd has sorta re-arranged the party plan for tomorrow. :tinysmile
AND, dh wants to go to Best Buy to find some DVD's of old TV shows.

Well, I just woke up 20 minutes ago and didn't put the chicken thighs in the oven before napping. I meant to wake up and do it at the right time but really zonked. So, dh is stopping on his way home to get something quick. Ds2's ears perked up at the sounds of kraft dinner. It's that or some of everything like wings, meatballs, veggies/dip. et. Unless he finds something else. lol
He just phoned. It's chicken burgers and salad. And kraft dinner to make ds2 happy. :)

Sick dd wanted a giant Arby's roast beef sandwich. I fixed myself salmon with greek lemon pepper and a side of sauted veggies, onions, yellow squash and spinach with balsamic vinagarette.

It's nice enough outside (no snow) so I thought maybe I'd get the grill out and do some burgers. :licklips: I'll pretend it's summer. :)
