I'm setting up a new spice cabinet with all fresh spices from our health food store and I was wondering which "staple" spices I need to include. I'll have 21 jars in the cabinet and I can always put more above the stove. I'm drawing kind of a blank beyond basil, parsley, oregano, cinnamon, etc. Which are your favorite spices?

You honestly use caraway & fenugreek seeds???? WOW!! I am really impressed! I don't think I have ever cooked with either one and not sure what fenugreek seed is!

Pam, I buy alot of the Polanar brand spices. They aren't dried. They are fresh set in a tiny bit of olive oil. You have to refridgerate them once they are open, but they last. I find mine in the produce section. They have garlic (I buy the big jar of that), basil, thyme and oregano.

From a non-cook:

As many kinds of pepper as I see in the store (I have white, seasoned, whole black, crushed black, lemon, red crushed, and two kinds of pepper-based grill rubs. Okay, I like pepper! LOL)

garlic powder (though my dd prefers whole or chopped in a jar)
cinnamon
sage
thyme
parsley
cinnamon
nutmeg
ground ginger
caraway seeds (Irish Soda Bread--once a year!)
chili powder
oregano
basil
bay leaves

That's off the top of my head. I'll bet there are a few more in there.......LOL

Cinnamon. It's good with brown sugar on toast. :goofy:

Really, the only one I don't think I could do without is salt. And pepper. Many I do love but they are at the top. I use Italian seasoning a lot. Same as parsley, I use it dried because I hate chopping it fresh. lol Lemon pepper. Guess everything has been mentioned. I have stuff I never use but have to have them, just in case. Go figure.

8o Okay, now I need to ask what these spices are used for! I did get a great list from you all though, thanks! I'll do a google search and print out what spices are used for and then try them out a few at a time. Wow... I can feel my horizons expanding already!

I have been trying out new seasonings lately. I used to just use onion powder, garlic powder and seasoned salt. Now I use the following on a regular basis:
Basil
Cinnamon
Dill
Garlic
Mustard Seed
Oregano
Paprika
Black Pepper
Rosemary
Thyme
Seasoned Salt
Italian Seasoning
