Does anyone happen to have these already in your 'puter that you could post? I'm looking for the lasagna rolls and spinach stick thingies recipes. Our libraries here don't carry the old magazines like that so I'll have to send dh to one of the libraries in Tucson if I can't find it.
I couldn't find the recipes on the website, but maybe because I can't remember the exact names of them.

Oh, ugh, I don't want you to have to type all that out though! The mag. may still be on the shelf, or I can check the used book store in Tucson. Do check them out though... they looked really good! :)

I have the magazine right here and am working on getting them scanned and sent.....may have to wait until I get back from getting the boys, but they will get to you. :)

Here are the recipes! :)
Spinach sticks
2 (10 oz) boxes frozen chopped spinach, thawed and squeezed dry
8 oz feta cheese
8 oz cream cheese, softened
pepper to taste
1 pkg. phyllo dough, defrosted
2/3 cup olive oil
Heat oven to 375*. In a food processor fitted with the steel S blade, combine the spinach, feta and cream cheese. Pulse the mixture until it is smooth. Season with pepper if desired.
Transfer the mixture to a Ziploc bag and snip a ¼ “
piece from one corner (or use pastry bag).
On a clean work surface, lay out 1 sheet of the phyllo. Brush half of the sheet widthwise with olive oil and fold in half to make a 7x9” rectangle. Brush folded side with oil. Squeeze a thin line of the spinach mixture (approx. 1 T.) along the folded edge. Roll the dough and filling the long way into a 9 “ long cylinder. Place the roll on a cookie sheet and brush it with oil. Repeat with the remaining sheets and filling. Bake for 12 – 15 minute or until golden.
Makes 40 sticks
Lasagna Rolls
26 oz jar sausage flavored spaghetti sauce
1 sm. yellow onion, chopped
10 oz ground turkey
10 oz breakfast sausage
½ tsp. salt
¼ tsp. pepper
1 tsp. Italian seasoning
2 large eggs
½ cup parmesan cheese
3 cups low-fat ricotta cheese
3 cups shredded mozzarella cheese
16 cooked lasagna noodles
Heat oven to 350*. Prepare two 7 x11 pans by spraying them well with cooking spray and spreading ½ cup of spaghetti sauce in the bottom of each.
Brown onion, turkey and sausage in skillet, drain fat. Add 1 jar of pasta sauce, salt, pepper and Italian seasoning. Let simmer for 15 minutes.
In a bowl lightly beat eggs, then stir in ricotta, parmesan and 2 cups of mozzarella cheese until thoroughly mixed.
Boil the noodles in salted water until tender, rinse in cold water and set them aside. When they’ve cooled, cut each noodle in half length-wise.
On a tray, lay out of strip of noodle and spread about 2 T of the cheese mixture along the entire length. Then spread about 2 T of the meat mixture on top of the cheese. Carefully roll up the noodle and place it, frilled edge up, in one of the prepared pans. Repeat with the remaining noodles.
Pour the remaining sauce over the rolls and garnish the top of each roll with the last cup of mozzarella. Cover each pan with aluminum foil and bake the rolls for 30 minutes. Remove foil and bake for 15 minutes more. Makes 24 servings.

I'm confused...is there ricotta in it...when I read the ingrediants I got excited because I hate ricotta.

Yikes! 8o Sorry 'bout that... I forgot the ricotta. I changed the recipe. I figure if you have a lasagna recipe you like that doesn't call for ricotta you could use it and just roll it all up. :)
You can substitute cottage cheese for ricotta too. I do that all the time.

bummer...guess you are out of luck as to alot of italian recipes!
