View Full Version : My favorite healthy breakfast
I usually take the easy way out and eat some cereal or a protein shake. I am trying to slow down and eat some quality protein. Here is my new breakfast:
One egg w/ one egg white whipped with a tablespoon of milk and lemon/pepper seasoning.
A bunch of fresh spinach
Chopped sundried tomatoes (non oil kind)
A pinch of fresh parmesean (sp)
Use spray oil and sautee the spinach and tomatoes. Pour the eggs over top and cook. At the very end, top with a pinch of shredded parm. Amazingly, the meal stays with me until lunch and I feel really good after eating it.
Anyone else have favorite healthy meals?

Is pico made with chicken or is it that combination of tomatoes and cilantro?

Yum! Going to have to give this a try.
I get on kicks and eat the same thing day after day. Right now I'm on a bowl of Strawberry Yogurt Cheerios with splash of skim milk. Sometimes it's oatmeal with brown sugar and butter spray, or a bagel with cream cheese, always have scrambled eggs on Sunday (dh's day to cook), some Saturday's I'll make a heavy breakfast of bacon or sausage, homemade biscuits and gravy.

I only ever have a piece or two of toast (40 Calorie bread) and a cup of coffee. I've never been a big breakfast eater though. :)

Oh, that all sounds good....(even the pop tart)
I have been boiling to eggs for 10 minutes, then shell them (carefully they are hot) 1 tbs real butter, salt and pepper....mash all together....YUMMY..just like mom made....

I love pop tarts... LOL I also love hard boiled eggs, but seldom ever eat them. (Easter's about the only time) I usually smoosh the yoke on a piece of toast along with melted butter. :licklips: That's the only way my kids will eat them too. :)
Do PopTarts count.... If I have some fruit too??
PopTarts with a fruit filling are the way to go :newwink:
Amy, I'm going to try your breakfast...I always have fresh spinach in the fridge.
My weeday mornings breaky always consists of a bowl of Special K (ssh, I add sugar :goofy: ).
Sat.,/Sun. it's usually always toast.

I'm pathetic! I'm reading about all these healthy breakfasts and here I sit with an ice cream sandwich in my hand! LOL
I really like Special K cereal but the healthy part comes out when I sprinkle sugar on it. And I love honeycomb cereal. :)

I don't know how low fat that is. Each egg has 5 grams of fat and the TBS of butter is 13grams-so total you have 23grams of fat for 2 eggs.

Don't know how healthy either is, but I don't eat lunch until 11:00 and I don't feel like I'm starving at lunch time. It's the after work I'm having the issues with. So Amy, is my breakfast healthy?

I don't think there is a lot of nutritional value to cheerios. Maybe add a good dose of berries to it (blueberries, raspberries etc?) I don't do well with high carb breakfasts. It seems to go through me to quickly and I am not as sharp. LOL
You mentioned you eat lean cuisine meals. That used to be my staple at work. Do you notice that there is white rice or pasta in every meal? That is processed carbs you are suppose to stay away from. It is also high salt. I am trying to take a can of solid albacore tuna with a 1/2 tbs of Hellmans light mayo and a lot of seasoning. I put that on a big bed of salad (from the bag). I find that I feel really good after that and I stay away from the processed carbs. Also try a low carb wrap with real turkey, lettuce, tomatoes, onions and any other veggies with mustard. Sara Lee makes this cranberry mustard that is awesome. I have to have this stuff made the night before because I never have enough time in the morning to make something healthy.

There are worse breakfasts than a bowl of cheerios with fresh fruit. Cheerios has no added sugar. (read the labels on some of those 'healthy' cereals) and is made with whole grain oats rather than processed. Whole grains don't raise insulin levels and stay in the system longer.
As to butter, lots of nutritionist believe in using a little of the real stuff rather than imiation or processed things. Lots of margarines have transfats and hydrogenated oils. Even 'lite' yogurts have all sorts of stuff added to them. I get very leary when I read labels and see words like modified corn starch.

If I ate breakfast and I could stomach it, I LOVE cheese omlets.
Since I can't eat eggs or have milk, my breakfast choices are limited. When I do want breakfast though I have a terrible sweet tooth--cinnamon rolls, toaster strudels, pop tarts (Strawberry only), muffins.
I'm not even going to pretend to think that any of this is healthy. I know better.
I wish I could eat fresh fruits cause I really do like a lot of them. They don't like me though.
I heard on the news today something about the benefits of blueberries. Can't remember what they were though! LOL
Blueberries are probably one of the best fruits out there! Super full of antioxidants. In the winter I buy the fresh frozen ones (no syrup just blueberries).
Linda, have you tried whole grain toast and natural peanut butter for breakfast? that's a good mix of protein, fat and carbs.

You know, I probably should try it again. It's been years since I've tried that brand. Mom gave us a jar of natural pb a couple of months ago and it was really gross... stirred and all. Maybe it's best to just steer clear of pb altogether! :lol:

Ds loves pommegranate juice, I buy it once in a while, it's expensive but found an alternative brand that's cheaper. Some is just the pom juice and some have mango or blueberry juice with it. He loves it all.
Blueberries are loaded with good stuff. I have read so many times how good they are for us. Ds3 is the only one of the kids who love them, but am working on the others. :)

I've tried a few of the pomegranate/XXX blends but do like the blueberry the best. Raspberry is ok too. It took a bit to grow on me, but enjoy it now. It is rather expensive though. I found a cheaper alternative, but it tasted cheaper too... yuck.

Peanut butter gives me major heartburn. Never tried natural peanut butter though.
I'm beginning to think that the foods I can eat will keep decreasing until I have to be hooked up to an IV forever!

getting heartburn from a wide variety of foods (or even a few) isn't healthy. have you seen a doctor about it? you could possibly have GERD or reflux which is easy to fix but can cause quite a few long range problems if not treated.

Yes I have. I have a hiatel (sp?) hernia. I'm on protonix, but that still doesn't make it possible to eat these foods. They still bother me. Probably the only thing that would change it is to have surgery== but I'm just guessing.

Dh also has a hiatal hernia and has to watch what he eats. Sometimes it's not always what he's eating but how much. I know sometimes it can be very bothersome. :(

yuck, they thought ds had that...isn't the barium swallow fun?! ;)
surgery isn't usually done unless you get a blockage. there are lots of other meds available. the treatment is the same for GERD.
