1 lb boneless/skinless chicken breasts
1 cup diced onion
1 cup diced baby-cut carrots
4 ounces sliced baby portabella mushrooms
Cooking spray
1 tsp Montreal steak seasoning
1 1/2 tbsp balsamic vinegar
*Combine three veggies in microwave dish, cover and cook for 5 minutes.
*Preheat large saute pan on med-high for 2-3 minutes.
*Cut chicken into 1 1/5 inch strips
*Coat pan w/cooking spray. Add chicken and sprinkle with w/steak seasoning. Cover and cook 2-3 minutes, turning once.
*Drain veggies and stir into chicken. Cover and cook for 5 minutes, stirring once. or until veggies begin to brown.
*Remove lid and cook 3 more minutes, stirring once. Stir in balsamic vinegar and serve.
