We'll be celebrating my mom's 80th birthday in a few weeks. I've been spending half of my day looking for/at recipes for something I can bring. Does anyone any good casserole/potluck idea's... any kind of dish that you think is especially good? I just can't seem to find that "just right" thing... Thanks!!

Anything but a dessert. Were having a big sheet cake delivered. Hot or cold... doesn't matter. Inside. My dd's, sister's, and all my neices are suppose to bring something, so the amount of people doesn't really matter, but I would like to bring a good amount because there are some coming in from out of town that won't be able to bring much of anything. I'd actually like to bring a few things, so anything you can throw my way that would be good will be appreciated. :) Thanks...

i have a couple of good appetizers. how spicy do you like it?
marinated veggies are good and can make ahead, can be cold or room temp.
meatballs with cranberry sauce/chili sauce in the crockpot always goes over well.
my brisket recipe is good, easy and travels well. doesn't matter if the meat isn't piping hot, you good do all the fixings and maybe a potato salad to go with it too..have a couple of good recipes for that.
down here a pot of pinto beans is a nice add on.
have a really good brown rice and apple salad recipe
those peppermint brownies always go over well and are easy.
oh, seeing Linda's apple post reminds me, I have a really easy recipe using a can of apple pie filling and yellow cake mix for kind of a crisp type thing. you can serve it with whipped cream or ice cream.

Were all letting each other know what were bringing. :) No special theme... just a bring what you want kind of a thing. Meatballs with cranberry sauce sounds pretty good... don't need/want any more desserts... I think if anyone brings anything like that it will probably be my neices who are coming in from out of town. It's easier to bring some kind of a desset than a hot dish or any kind of a cold salad... otherwise we have the sheet cake. :)

What would you use for a topping... whipped cream? I'm also wondering if there would be a way of making it in a 9x13 cake pan... I'd like to make two 9x13 cakes, putting them together, then frosting them so it looks like one big cake, and decorating it myself. :)
well, it don't think it's supposed to be frosted. i just did a dollop of whip cream or ice cream on each serving when i made it. it comes out more like a streussal or cobbler than a true cake.
i don't see any reason why you couldn't double it.

I've just made this with Sarah. I'm anxious to see how it turns out. IF it tastes as good as it sounds... I'm going to make a big sheet cake of it for my mom's 80th birthday party. :)
(You should have seen Sarah. She took her battery operated mixer out of the bowl as we were mixing the ingredients together, and she got batter all over everything/herself. The look on her face was absolutely priceless. Sooo funny... :)
i am going to be interested to see what you think since you keep referring to this as a cake and it's more of a cobbler! ;)

1 (14 ounce) can cream of coconut 3/4 cup pineapple juice

1. Prepare and bake white cake mix according to package directions for a 9x13 inch pan. Remove cake from oven. While still hot, using a utility fork, poke holes all over the top of the cake.

INGREDIENTS:

1/2 (14 ounce) can sweetened condensed milk
6 ounces caramel ice cream topping 3 (1.4 ounce) bars chocolate covered toffee,
chopped
1 (8 ounce) container frozen whipped topping,
thawed
DIRECTIONS:
1. Bake cake according to package directions for a 9x13 inch pan; cool on wire rack for 5 minutes. Make slits across the top of the cake, making sure not to go through to the bottom.
2. In a saucepan over low heat, combine sweetened condensed milk and caramel topping, stirring until smooth and blended. Slowly pour the warm topping mixture over the top of the warm cake, letting it sink into the slits; then sprinkle the crushed chocolate toffee bars liberally across the entire cake
while still warm. (Hint: I crush my candy bars into small chunks as opposed to crumbs - I like to have pieces I can chew on!)

It's SO easy to make and... it's REALLLY good. I'm going to try a few of the other recipes you posted too... see how those turn out. Don't know what I'm going to do with all this cake I'm making though... LOL Maybe invite some of my neighbor's over for cake tasting so they can tell me which one they like the best. :)

This recipe sounds delicious... but I've never ever heard of sweetened coconut milk. Where would I find this... by the milk? Have you ever made this yourself and if so... do you taste a lot of the coconut? I know of a few people who don't like coconut... but if it's not a real strong taste I could get away with it. :) Thanks for posting all these great recipes... :)
I've had the Better than Sex Cake before and it is very good too. :)

I didn't origioinally... but I think HM is so much better than store bought. Not too sure about decorating it... I don't think I'll be able to pull that one off, but I think I can at least make it look good enough to pass the test. 1 pint buttermilk
16 ounces frozen whipped
topping, thawed 2 (11 ounce) cans mandarin

YUM! I would never think to do that!! Does the juice add a lot of noticeable flavor? I'd love the recipe...please!! :D
my grandmother used to take me to Baskin Robbins years ago and we would have their chocolate mandarin sherbert ice cream. it was heaven and the idea never left me! Taking frozen orange juice concentrate and mixing it in with chocolate pudding is good too.
it's really more a hint of 'what is that?' than a real taste. didn't notice it much at all cause dd was flipping out! LOL i usually replace the water with the juice.

Ann do you remember Baskin Robins used to have a MUD PIE? it was Moca almond fudge icecream with a hot fudge topping?

I helped Dd #3 make the cookie salad... it was a great hit and she had many people asking for the recipe.
I made Ann's recipe for the Preacher's Delight. It was just awesome!!! :licklips:
I also made the meatball recipe someone posted, the one with the grape jelly/chili sauce... It had a real different taste... one that everyone just loved. :licklips: All the meatballs were eaten, and I had to promise to e-mail a few the recipe.
Then I brought my meat/cheese... fruit platter. I also included some of those meat/cream cheese... pickle wraps, and those all left too.
Everything everyone made was really good. :)

They really are good. :) I made some for our neighborhood block party and they were gone in no time then too.
