I am having 3 people for dinner on Sat. before some more people come later to play cards. This is what I'm serving and I need to know what else to serve, be it another side dish or a starter dish.

Roasted Garlic Cauliflower
Feta Cheese and Bacon Stuffed Chicken Breasts

oh yum!!! recipes please!!

a marinated veggie salad with a warm goat cheese crouton?

you have alot of white on the plate, why not add roasted either asparagus, green beans or zuchinni to side with the califlower.

Mmm, I think I might do the asparagus, but I'd have to find out first if my guests like it...some people don't. I also might pan fry it instead of roasting...the two dishes I already planned require 2 different temperatures and 2 different cooking times, lol.

Cauliflower at 450 degrees for 25 minutes
Chicken at 350 degrees for 30-35 minutes

Any advice Ann, if you were making these?

Do Ann's new crockpot roasted potatoes! Or do my version in the oven and add asparagus - that'd put a starch in the meal as well as some texture and color. :)

do you have one or two ovens?
if you have one, i would do the veggies on the stove. toss both the cauliflower and green veggie (you could do broccolli too) in olive oil, garlic, salt and pepper and pan roast them. if you did the broccolli,, you could cook them together, if you did asparagus, toss those in at the last 5 minutes.

Yeah. I just thought with the skins on, they wouldn't be AS white. LOL

Just one oven. I'm wondering if I could split the difference on the temperature...say 400 degrees and cook the cauliflower longer and the chicken in less time, lol.

no, don't raise the chicken temp, it could dry it out too easily.
you can cook the cauliflower at the same temp, but it might tasted more baked than roasted.

yes...see below ;)

LOL...I meant where I could do both in one oven :goofy: Guess I'll do the cauliflower on the stove. Or maybe I could do the cauliflowe ahead and just "heat" with the chicken?

I think it would get soggy if you did that.
I think it would be ok to bake at the same time as the chicken. Just don't cover it and toss it in olive oil along with the garlic. Are you going to cook a green veggie with it?

K, that sounds good...cause I really do want to cook the cauliflower in the oven, lol. I am going to do a wilted spinach side with honey/vinegar.

A link to the recipes are in my second post in this thread.

Here's the spinach side recipe...

Add oil, 2 turns of the pan, and ham. Sear ham and caramelize at edges, 2 minutes.
Add spinach and wilt the greens into the pan then season with salt, pepper and a dash of nutmeg, optional. Cook 5 to 7 minutes more, turning frequently with tongs then add vinegar to the pan and a drizzle of honey. Turn to coat the greens, adjust seasoning and transfer to a serving dish.

yum!! saw the recipes. very good! you could most definitely add brocolli to the cauliflower if you wanted.
since the chicken has bacon in it, i might use bacon instead of ham in the spinach..keep the flavors the same.
