View Full Version : Freezing fruits and vegetables

I recently joined a Farmers Market Co-Op. Sometimes I get more than I can use, so instead of throwing stuff out, I've started freezing the things I know we don't eat very quickly. I don't blanch anything, I just wash it and sometimes slice it (like yellow squash and peaches), then put it into freezer bags. Does anyone else freeze a lot of stuff? I've been using the broccoli in salads, so I don't want it cooked, and I thought I'd add the squash to shish-ka-bobs the next time I make those (can't think of anything else to do with the squash). What do ya'll think? I'm not planning on keeping this stuff anywhere near the length of time that the info says you can if you blanch it (up to 18 months), but I'm not sure that that's the only reason for blanching. What do ya'll think?

I just had shish k bobs with yellow and zucchini squash last night! Yummy! When dh and I grew a small garden I would go out and pick and squash, slice it up and saute it with a little cooking spray, salt and pepper. We loved it! Fast and cheap veggie!

I'll bet it was great right out of the garden. I'd love to have a garden. I tried growing tomatoes in a pot last year, but I never really got any.

My mom use to fix yellow summer squash by browning
hamburger and slicing the squash thin and simmering it with the hamburger add salt and pepper and thinly sliced onions too, yummy!
