View Full Version : Cooking for the week of Oct 8th?
Whatcha got cooking this week?
I made a yummy soup yesterday of turkey sausage, beef broth./tomato based sauce, carrots, zuchinni and fresh tortorlini. It tasted yummy and fresh.
Today I plan on making meatloaf, hashbrown casserole and a veggie
Other ideas this week-
grilled chicken and a sweet potato/apple/craisin steamer side dish. I found the recipe on the Ziploc Steam bag site.
Linguine and clam sauce/Salad

It's going to be a cold day so I thought Chili and a salad would taste pretty good. I'm going to make some kind of a casserole (not sure which one) on Thursday. I'm saving my roast for Saturday.
Meatloaf sounds good... it's been a while since we've had that.
made a soup last night too. all sorts of good veggies, pinto beans, shell pasta. had that with cornbread.
think i will make hamburger stroganoff tonite. something in the crockpot wed and thurs.

mmm....sounds like a yummy week.
Made the chicken and the egg plant for this week. Think I'll make one mor thing just not sure what.

amy~ Hashbrown casserole??? Recipe please.
Grilled shrimp and a big salad for those who are not shrimp interested...there is some left over beef stew....
Thinking tomorrow is meatless....just spaghetti and marinara...
Thursday is too far away for me to think of right now....

Hash Brown Casserole II

Yields: 12 servings
"Cheesy and delicious, this hash brown casserole has a crunchy topping."
INGREDIENTS:
1 (2 pound) package frozen
hash brown potatoes, thawed
1/2 cup melted butter
1 (10.75 ounce) can
condensed cream of chicken
soup
1 (8 ounce) container sour
cream
1/2 cup chopped onions 2 cups shredded Cheddar
cheese
1 teaspoon salt
1/4 teaspoon ground black
pepper
2 cups crushed cornflakes
cereal
1/4 cup melted butter
DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine hash browns, 1/2 cup melted butter, cream of chicken soup, sour cream, chopped onion, Cheddar cheese, salt and pepper. Place mixture in a 3 quart casserole dish.
3. In a medium saucepan over medium heat, saute cornflakes in 1/4 cup melted butter, and sprinkle the mixture over the top of the casserole.
4. Bake covered in preheated oven for 40 minutes.

oh yummy! i love that hash brown casserole recipe - i just omit the cornflakes. yuck! lol

Oh my cousing made those with tata tots insted...minus the cornflake....OMG they are sooooo good.
