I'm looking for easy recipes that don't require an oven that would be fun and easy to make with my preschool class.
With summer just around the corner (I hope), I'm even thinking of some fruit salads.
Have any ideas for no bake cookies? I have a small buffet range (2 burners) that I can use in the classroom.
I suppose we could do some easy bar recipes too and beg our cook to bake them as long as we do the prep work.

There are a lot of recipes for cereal bars. The kids couldn't help with the cooked mixture to hold it together but they could take turns dumping cereal in.
My favorite is:
cereal bars
In saucepan combine
1C sugar
1C. corn syrup
Bring to a boil, add 1 1/2 C peanut butter
In a big separate boil have
4C Cheerios
2C rice Krispies
2C m&m's
1 C. choc chips
1/2 to 1 C peanuts is desired.
Pour mixture over cereal and choc. Press in a pan. Refrigerate.

You were talking about doing a fruit salad. That is what I did with my two year old class. They had a blast. I bought a can of mixed fruit, some coconut, a banana and an apple. I had to cut up the banana and apple, but I gave each of them some to dump into the bowl, and then I let them take turns stiring it. You could even add crushed nuts if you are allowed. I wasn't do to choking hazards of two year olds.

Looks like you have recieved quite a few ideas for no-bake ideas. Here's another one that I have always found the little one's to enjoy.
Jelly Clouds
************
Prepare jello mixture as indicated on the box. Everyone can have a turn to stir until the powder is dissolved then put into the fridge to set. When not quite set, let children help to fold in whipped topping until it makes a fluffy cloud. Return to fridge for abut an hour to finish setting and serve.
Pudding popsicles
*****************
Let children help prepare instant pudding by putting all ingredients in a sealed container and letting each child have a turn to shake it until mixed.
Have a paper cup for each child. Let them add a few of their favorite treats to the bottom of the cup. (ie: smarties, mini marshmellows, sprinkles, small pieces of fruit etc.) Then pour pudding into the cups filling about 1/2 - 3/4 full depending on size of cup. Insert a popsicle stick and put into freezer until set. A good treat for a hot day!
A favorite after our yearly visit to the farm is making our own butter.
Fill an empty jar about half full with whipping cream, a pinch of salt a dash of yellow food coloring(optional). Put the lid on tightly. Let each child shake the jar until a ball of soft butter forms in the bottom of the jar. Pour off the remaining liquid. (you could also save this and taste it ~ buttermilk) Spread butter on crakers and serve as a snack.
Hope these are of some use for you! :P

I just got this idea sent to me from my food program and thought it would be something easy for your class to make.
Banana Snowman
1/2 banana per child
Stick pretzels
Cereal squares (like Chex)
Raisins
Carrot shavings
Coconut
Show children how to arrange three round banana slices on a plate to look like a snowman. Help them add a pretzel stick above the top slice and add a cereal square for the hat. Give them two raisoins for the snowman's eyes and three raisins for the snowman's buttons. Use a carrot shaving for the nose. Break a pretzel stick into pieces to form the mouth. Add pretzel stick arms. Let the children sprinkle the Banana Snowman with flaked coconut "snow."
