Bring on your great picnic recipes!! Something easy to carry and will last 4-5 hours without reheating/cooling (other than a cooler.) We are picnicing with 8 adults and 9 children ages 2-14.
2 cans black beans rinsed and drained
2 cans of corn rinsed and drained
2-3 jalepenos finely chopped
2-3 tomatoes finely chopped
1/2 cup finely choppped onion
bunch of cilantro finely chopped
juice from a couple of limes
Toss all together and refridgerate overnight. Serve with chips.
* you can add grilled shrimp or chicken and serve over lettuce if you want to make it a meal.

I was just wondering if you thought this would taste okay without the jalepenos? (No jalepeno lovers in my family) :) This might sound like a really stupid question (and it probably is) but... what is
cilantro? I don't think I've ever heard of it. LOL

Diane...I think it would be fine without the jalepenos (not as good, but fine) :newwink: Could you add a little cayenne to it instead?
Cilantro is a leafy herb, you find it in the produce section. You MUST that! Just chop it up really finely...it's wonderful.

Thanks... I'll have to give it a try. Maybe I'll try it with a (very) few jalepenos in it. It sounds good! :)

Diane...you could just use some jalepeno juice if you want or a couple of shakes of cayenne.
