View Full Version : What to do with chicken breasts?
I'm wanting to do healthy chicken for dinner tonight. I've got the basic herbs, lemon, asparagus, red pepper, lima beans, cabbage, potatoes, onion, carrots, ummm... I know there's more veggies in there, but can't remember what. What kind of dinner would you do w/that. My first choice would be chicken wraps, LOL! But that's not too healthy.

why wouldn't your wraps be healthy?
Well, the tortillas aren't low carb, we tend to use cheddar cheese and ranch dressing to boot. :grimace:
I just found some chipotle marinade mix, too, so might go with that. After you mentioned stir fry I remembered the HUGE bag of birds-eye stir fry veggies in the freezer! :lol: So we may go for that, lol.
I think I'm hungry, lol, 'cause it all sounds good.
why not use your fresh veggies in the stir fry?
buy some lite Ranch and use whole wheat tortillas or corn (low carbs are nasty!) put some avocado in them.

What about doing a lettus wrap...I just had them for lunch and they are awesome....use the leaf of the lettus for your toritilla....light and refreshing with the chicken inside :drool:

Just what I was going to suggest, lol...except I didn't think of the avacado.
I would almost rather use the fresh veggies for other things since I already have the stir fry ones ready to go.
I decided to do the chipotle chicken today w/asparagus and potatoes or salad, and keep the stir fry for another night. :)

That does sound good! A friend of ours on the Atkins diet recommended using a big lettuce leaf as a hamburger bun, too. Said it was really good. :) I'm going to have to try that.
Ann, I haven't even seen the whole wheat tortillas... but then again, I probably haven't been looking too hard, either! :lol: I'll have to check next time I'm at the store.

They call that a Protien burger here....its really good, but a little messy :) (no where for the juice to absorb)

Wheels are turning. lol I'm thinking some red onion and a sweet sauce would be good.
Never would have thought of doing that with a burger. Wouldn't it be very slippery if you had mustard or anything on it? Or the tomato falling out? lol A crispy chicken burger might work because you have something to stick to the lettuce. :)
What if you wrapped it like a taco, making sure the fold is on the bottom? Still messy, but maybe stuff wouldn't fall out as easily?
