Ok Whatcha making for dinner tonight?

we are trying to get back to making Sunday dinner, which for us is Spaghetti with Meatballs, garden salad.

I got a new cook book from Pampered Chef. I think it's called 29 Minute Meals. Tonight I made Artichoke and Rosemary Chicken and Potatoes (I think that was the name of it.) Ds doesn't like potatoes so he didn't even taste them. he didn't like the chicken at all. Dd and I both loved the potatoes. She loved the chicken, I thought it was ok. Need to add a little more spice to it.

Tomorrow I'm making a beef enchilada bake form the same cook book.

I'm thinking that we'll probably just stick a frozen pizza in the oven tonight... maybe add a salad. Quick n easy, which is right up my alley... :)

Spiced potroast (chutney, raisins, broth and curry powder) and roasted veggies.

dh went to see his folks, and the kids never eat what i cook anymore so my motivation to actually cook is lower than normal.

I almost bought that book...but I just stick with the seasons best cook books.

Think I'll make lemon pepper chicken...not sure what else.

Maybe stir-fry. I think we have everything here to make it. Will have to take some frozen chicken breasts out though, so I better go see if it sounds good to dh.

We ended up going to the little cafe in town with one of our neighbor's... they've got the absolute best food. :licklips: Our neighbor had never been there before and wanted to try it out after we told them about it. They asked us to come along... so our pizza will have to wait for another night.

Easy couple of days for me. Last night we had pizza because ds2 had buddies over. Tonight we're going out to a friends and tomorrow is spaghetti. Not sure about the rest of the week yet.

:drool: what time? That sounds so good! Thinking a sandwich...I am mentally and physically spent...just a long day!

I'm finding it hard to cook. No one to cook for. Dh is out of state, ds works nights, and now that ds and dil have moved to town they pick up the gbs after school. I'm all alone and cooking for one stinks. I could live on weekend leftovers, all week. Ds does insist that I cook a couple times and put him a plate away, but it is so hard to cook a meal and have no one around when it's time to plate up.

Honestly I could eat soup and sandwiches every night of the week.

I did make a huge crockpot full of ham and scalloped potatoes on Sunday thinking ds, dil and gbs would come over after church. Dil was sick and they didn't come to church and missed my call about lunch so I've been eating that since.

I'd probably be eating soup/sandwiches... salads all week if it were just me... OR, I'd be stopping off and picking up some Chinese. (enough to last me two or three day's... :lol: )

It can't be fun eating by yourself each/every night.
