I noticed that most of you serve meat/veggie with each meal. We do too, but I'd like to get away from that and hopefully lower my grocery bill a bit. What are some of your meatless meals, or meals where meat isn't the main dish?
Some meatless meals I make include:
-Whole wheat pasta with tomato sauce
-Homemade soups, i.e. cauliflower, tomato, tortellini with spinach
-Toasted tomato or grilled cheese sandwiches
salad and baked potatoes, any type of pasta, soups, grilled cheese, veggie stir fry.

When I was little we used to eat lima beans and rice with corn bread....lol! I also like soups and grilled cheese sandwiches or a grilled cheese with a salad.
Oh..pintos and cornbread!!!

Brich doesn't think it's a meal if there isn't meat in it so we only have a few meatless meals.
Bowtie pasta with marinara.
Tomato soup and grilled cheese.
Broccoli and Cheese soup with french bread.

Thought for sure I read this thread as meatless meatballs. lol
Pasta and sauce we do once in a while. Sandwiches and salads. I love home made soup and would do that more often if the kids would eat it (never were big fans of soup). Grilled cheese and fries or you could do baked potatoes. In the summer, growing up, cold pork beans, pickles, salads and cold lunch meats were huge at our house. Whatever came out of the garden was on the table. Now I'm wishing I had a cucumber sandwich! lol
Angie, my fil is like that. Mil couldn't even make spaghetti for a meal unless she had meat and potatoes and the spaghetti as a side.
Brich doesn't think it's a meal if there isn't meat in it so we only have a few meatless meals.

it must be a midwest thing. dh is the same way. it's taken 28 years for me to convince him that we don't have to have a starch with every meal either!!!

lol! brich doesn't mind not having a starch so long as there are different veggies. He says he gets hungry again really quick if he doesn't have meat.

My dad is the same way... he doesn't think it is a meal unless there is a meat, starch and veggie, and don't even think of adding a fruit. He was born and raised in FL though. I know of a few others that are the same way.

I feel so lucky that dh doesn't care if he has a meat with his meal or not. It sure makes it a lot easier for me... ;) (that he's not so picky)
When dh was a vegetarian we did a lot of pasta with marinara, bean and rice dishes, salad, baked potatoes with all the fixings.
Mercy! I forgot I posted this! :blush: Thank you all, so much! Dh is okay with meatless/lighter meals, so that is great! It's just my own mindset I need to change! :lol:
