Meatless Meatballs

1 C Italian bread crumbs 1-1/2 t. garlic powder
1/2 C Sharp Cheddar Cheese 2 T Dried Parsley Flakes
1 C Ground Pecans 1/4 t salt
6 Eggs, Beaten (OR Egg beaters)
1 (46) oz Tomato Juice 1 Onion Chopped
2 T Oregano
1 1/2 t Garlic powder (for juice) or 2 T Italian seasoning mix

In a large bowl mix bread crumbs, cheese, pecans, eggs, onions, garlic, salt, and parsley. If mixture is too moist add additional bread crumbs. Form into small balls.
In a large skillet with oil, fry the meatballs until golden brown.
Put rest of garlic, oregano and tomato juice in a large pot and bring to a boil.
Put meatballs into tomato juice and bring to a boil, then reduce heat to simmer and let simmer for 1 hour.
Stir occasionally. Take the meatballs out of the tomato juice and put into an airtight container for storage.
Keep refrigerated until used. Use your favorite tomato sauce and heat meatballs in sauce and serve over spaghetti noodles.
Meatballs may be frozen. Yields approximately 30 meatballs. Note: Do not serve the meatballs in the tomato juice and oregano sauce, the sauce is a little strong with the oregano.
UNLESS like me you love the taste of oregano.

SPECIAL K LOAF


1 Large Onion Chopped 1/2 Cup Ground PECANS
1/4 LB Melted Butter 6 EGGS
2 (1) lb cartons Cottage Cheese
5 C Special K Cereal
1 package LIPTON ONION SOUP MIX

Mix all ingredients together and place in a greased 13 X 9" baking dish.
Cover and bake at 350 for 1 hour, uncover and bake an additional 1/2 hour.
May be served as is or with a cream of Mushroom gravey.

ZUCCHINI BREAD

3 Eggs 2 Cups Sugar
3 teaspoon Vanilla 1 Cup Oil
3 teaspoons Cinnamon 3 Cups Flour
1 teaspoon Salt 1 teaspoon Baking Soda
1/4 teaspoon Baking Powder 2 C Zucchini, grated
1 C Nuts, chopped

Beat Eggs and Sugar.
Add Vanilla, Cinnamon, Salt, and Oil to Egg Mixture.
Beat in the rest of the ingredients.
Pour into 2 greased loaf pans.
Bake at 350 for 1 hour.

Pam : these are ones that I have been doing lots of lately ..
the meatless meatballs .. depends on the size you make them as to how many ya get outta them really. When I first started making them was making them about bite-size for the little ones .. so we ended up with like about 45 to 55 of them .. you can change up the ingredients depending on how ya like them .. we loveeeee oregano so we left them in the oregano sauce for us.
You can also make the mix and shape it into a meatloaf and bake it same as a meat meatloaf if you want too.

Also on the Special K, you can use the wheaties cereal too.
These we also took and baked them in the MINNIE MUFFIN pan .. yummm .. if done this way cook them only about 20 mins. ok ...

the grandkids ate them almost as fast as we took them outta the oven .. lolol
We like our spices so we used more of the garlic powder / onion powder in them .. plus you can add like cayenne to them, just however ya want to do them.
First time ya do them its takes a while to make so make sure that you have the time when getting started with them.
But after that it is just really fast, cause then ya know to have it all ready to go .. lolol
These were recipes that were in our fund-raiser cookbook at church.

Veggie Pizza

2 packages of crescants. open unroll flatten out on cookie sheet .. bake at what package says ... yes while this is cooking ..

take a package broccoli - cauliflour - carrot mix - put in food grinder and grind til tiny pieces ..

16 oz fat free sour cream

2 - 1/3 fat free cream cheese

1 envelope of zesty Italian seasonings (from the baking isle)

1 package of skim milk shreded cheese that you like, (we use the taco cheese and skim milk mazarolla?)

put sour cream, cream cheese Italian seasons, in bowl and mix.
once crescants are baked, take out of oven, spread with cream cheese mixture, then the veggie mixture, then spread with grated cheese.
cut and eat.

cut corn off the cobb, chop tomotoes, avocado...squeeze fresh lime on top, salt and pepper.

I get the different tastes and I was really picky as a kid myself so I can be really understanding but I have limits. It kind of depends on what else they do eat on if I make them eat something, kwim?

is there any way to make spinach or brussel sprouts taste good? (I love spinach, but only if it's "in" other stuff.) Have you ever tried swiss chard? It's good on it's own. I hated brussel sprouts as a kid and haven't had them as an adult. Spinach salad is good.

what are your easiest ways to add more fruits and veggies to your diet? We eat a lot of fruit. We always have at least one fruit with every meal. In the summer there is always strawberries, bananas, watermelon, etc. in the house. Veggies are usually uncooked, and served with the meal. We're not huge veggie eaters.

at what point do you tell your picky kids "Just eat it, it's good for you!"? They eat what I cook. I will admit though, that I usually cook things that I know they will eat. These are not always their "favorites", but I know they will eat.

your fav veggies/prep method/recipe- I like to add a little salt, pepper, and olive oil and stir fry them until they are tender but still crisp.

your fav "light" meals- I do salads with shredded chicken on top or shredded lunch meat if chicken isn't available.

your fav summer meals- In season veggies from the garden. for lunch, there is nothing better than having a sandwich with sliced tomatoes and cucumbers and for supper having fresh picked squash or corn.

your fav meatless meals- really don't have any, but lima beans and rice with corn bread is one we have sometimes, though it isn't a fav

your fav healthy meal-Grilled meat with steamed veggies and a salad

your fav healthy rice recipes- sorry, I can't help you with this one

do you make your own bread? sometimes

what are your easiest ways to add more fruits and veggies to your diet?- Eating salads or putting them on my sandwiches- using fruit as a snack instead of choosing chips or cookies.
