This one is for the microwave, fast and easy!!!!

Special K Cookies

1 c white sugar
1 1/3 c peanut butter
1 c white corn syrup
5-6 c special k cereal (or corn flakes)
1 t vanilla
1/8 t salt

1. Blend syrup, sugar, vanilla and salt in a 2 quart microwave-safe dish. Cook on high 4 minutes or until mixture boils and sugar dissolves.

2. Stir in peanut butter, then add the cereal and mix to coat.

3. Drop by teaspoonfuls onto waxed paper. Let cool before storing.

here is another

Microwave on high for 2-3 minutes (or until bubbily all over)
2/3 cup light corn syrup
1/4 cup packed brown sugar
1 cup p-nut butter
1/2 teaspoon vanilla

Stir in 4 cups crisp rice cereal (we use special k or corn flakes)

press into jelly roll pan or cupcake pan or whatever gets ya. Refridge it for an hour or more. Store it in the pantry.

Its called Crispy cereal squares in Better Homes & Garden if you want to look at the stovetop directions or if I made a mistake on the microwave directions. The only caveat is that not all versions of the cookbook have this recipe.

these sound terrific, thanks....thinking of baking cookies now...wonder why? :lol:

THANKS for the recipe's... I like the fact that you don't have to bake them in the oven. Something fun and easy to make with the day care kids! :)

Posting recipes like these (and especially since they are so easy to make) does nothing for my plan of working on these 5 pounds I want to lose! :tearhair: LOL!
