Well, back to school is almost upon us and that means some work projects for me, so I have to get my head around more structured meal times.
I bought a crock pot last year after hearing everyone rave about theirs and the convenience, and it was a bust with my family.
So now, I am looking for healthy, kid-friendly, non-goopy crock pot meals, lol.
Can anyone help me out?
Ann, I have the site you posted, it is wonderful, but at this point I need some word or mouth recipes, the tested and true kind.

I did your potato and chicken recipe the other night and it was really good...loved that potatos came out almost roasted.
Have you done pot roast or stew? Those are my kids favorites. Another easy thing to cook (and fairly healthy) is a brisket, but it's better to slow cook it in the oven at 225 for 6 hours...so I feel ok about leaving it.

Chicken breasts, one can of black beans drained, one can of rotel tomatoes..cook...serve with rice. I have also used this as a base for soup and added one can of corn and then topped with avocado, cilantro and some cheese for the kids.

What exactly are rotel tomatoes? I see them mentioned in a lot of recipes and I don't see them at the supermarkets here. Are they just regular canned tomatoes? plum tomatoes? seasoned tomatoes?
Your recipe sounds good, think I might add those ingredients to my shopping list. Thanks Ann.
They are a brand of canned tomatos with mexican spices...pretty much the base for queso down here. If you don't have rotel, I would use a can of chopped tomatos, one can of green chilis, squeeze of lime and some chili powder. You could probably toss some picante sauce in there too.

I don't use my crock pot a lot, but when I do, it's usually goopy!

Let me just say, my Crock pot is a God-send!!!!! I love it!! And I love the fact that I don't have to do anything but put the food in, and take the food out!! No stirring, no nothing!!!!!!

Hash Brown dinner
1-1 1/2 lbs. ground chuck, browned and drained
1 medium onion, chopped
1 envelope brown gravy mix
1 can creamed corn (I omit this!)
1 1/2 cups shredded cheddar cheese
1 pkg (16 ozs.) frozen hash browns, slightly thawed
1 can cream of celery, mushroom or chicken soup
1/2 cup evaporated milk
salt and pepper to taste
Place ground beef and onion in crock pot; toss with gravy mix. Pour corn (if using) over ground beef mixture, then add half of the cheese. Top with hash browns and remaining cheese. Mix the soup and evaporated milk and pout evenly over hash browns. Cook on low for 6-8 hours or high for 3 1/2 - 4 1/2 hours. If using a 5-quart crock pot, you may use 2 lbs. ground beef and 32 oz. hash browns.
Round steak and rich gravy
2 lbs. round steak
1 can cream of chicken or mushroom soup
1 envelope dry onion soup mix
1/2 cup water
Cut round steak into serving pieces. Mix remaining ingredients and pour over steak. Cook on low 10-12 hours.
Gravy is great on mashed potatoes!
Pork roast with sweet potatoes
3 lb boneless pork roast
2-3 large sweet potatoes
1/2 cup apple cider
3 tbsp brown sugar
1 tsp cinnamon
salt and pepper to taste
Put roast in bottom of crock pot. Cut sweet potatoes into thin slices or small chunks and place around sides of roast. Mix remaining ingredients and pout over top. Cook 4 hours on high.
(this recipes yeilds the most tender pork roast I've ever had!!!)

For regular pot roast, I mix worshtershire sauce, ketchup, water and a splash of Dale's seasoning to make approx. 1/3 cup total and pour over roast. I use prepared baby carrots so there's no chopping, except for the potatoes, which I cut into very thin slices. I'm a southern girl and like my veggies cooked til they're mush!!!!! :licklips:

Here is mine.
1 1/2 pounds ground beef or chuck
1/4 tsp garlic powder
1 tsp salt
1/4 tsp pepper
6 medium potatoes peeled and sliced
3 medium onions sliced
1 can condenced golden mushroom soup
1/2 cup watere
Brown beef and drain.
Add garlic powder, salt, and pepper.
Place 1/2 potatoes and 1/2 onions in greased Crock Pot.
Add beef.
Top with rest of potatoes and onions.
Combine soup and water and spread over top.
Moisten and cover everything evenly.
Cover and cook on Low 8-10 hrs. or high 3-4 hrs.
