Now that its heating up over here, we are eating salds and the such, lots, but I am running out of recipes. Anyone got any faves, we are not allergic to anything and ds eats everthing.
Any other summer type recipes would be appreciated as well.

Morning!
We had a hot summer here and I made alot of pasta salad.

Cook rotini noodles according to package directions.....drain....rinse with cold water....add cut up tomato, diced cucumber, and I would add some broccoli....or any other veggie that you like. Pour Italian salad dressing over and let sit for flavors to blend.

One really easy one that I made is.... 2 bags of corn chips....toss with small bottle of Russian salad dressing and serve. Chips will go soggy if you leave it too long, but is great when eaten right away.

We also do pasta salad like Darlene and add mozzerella cheese cubes, pepperoni slices and carrot discs. :)

sounds simples because it is....make your favorite garden salad....we use cold fried chicken, or you can cook up some chicken tenders from your freezer....toss in some oriental crunchy noodles, and some sesame / or poppyseed dressing...

Here's a couple of our family favourites:

Broccoli Salad
1 head broccoli
1/2 - 1 lb. bacon
1/2 cup Spanish onion (chopped)

Dressing:
1 cup mayonnaise (Miricle Whip)
1/4 cup sugar
3 tablespoons vinegar

Wash broccoli, drain and cut the whole head into bite size pieces. Fry bacon until crisp and break into small pieces. Cut onion fine. Put these ingredients into a med. size bowl. Mix dressing and pour over the ingredients in the bowl. Set in the refridgerator for a few hours before seving. Just before seving, top with shredded cheddar cheese give a final mix and serve.


Potato Salad
5 - 6 med. potatos
2 eggs, hard boiled and chopped
1 cup diced celery
1/2 cup chopped onion

Dressing:
1 cup manyonnaise
1/2 cup whipping cream
2 tablespoons vinigar
2 table spoon sugar
1-1/2 tsp salt
1/2 tsp. dry mustard powder
1 tablespoon dill pickle juice (optional)
Boil potatos until tender, then slice into med. size bowl. Add eggs, celery and onion. Pour on 3/4 of dressing mixture. Stir, cover and chill to blend flavors.
Just before serving, mix in remaining dressing to moisten salad.
Yeild: Makes about 5 cups.



Taco Salad
1 lb. ground beef (lean)
1 pkg. taco seasoning
1-1/2 cup chopped tomatoes
3/4 cup grated Mozzarella cheese
3/4 cup grated cheddar dheese
2 cups of shredded or torn lettuce
taco/nacho chips

Brown hamburger and frain grease. Follow seasoning instructions. Let cool. Mix in tomatoes, cheeses lettuce and pour over chips.
We also add a little sour cream, and salsa sauce to the top.
This is the kids favorite.

Best Chicken Pasta Salad

Ingredients:
2 boneless, skinless chicken breast halves
3/4 cup steak sauce
1 (12 ounce) package fusilli pasta
2 cubes chicken bouillon
1 Vidalia onion, diced
2 avocados - peeled, pitted and diced
1 cup halved cherry tomatoes
1 cup Ranch-style salad dressing

Preparation:
1. Preheat an outdoor grill for high heat. Place breasts into a glass baking dish and marinate in steak sauce for 15 to 60 minutes. 2. Grill chicken until no longer pink and the juices run clear. Remove from grill, and chop into bite-size pieces. 3. To a large pot of boiling water, add bouillon cubes and pasta. Cook pasta until al dente. Drain, and rinse under cold water. 4. In a large bowl, combine chicken, pasta, onion, avocados and tomatoes. Mix in salad dressing, cover, and refrigerate until chilled.

Serves: 8

That sounds really good Diane. Do use A1 steak sauce or something else? Also, I'm the only one here who like avacodos - would cheese cubes or something else be good with it?

I love avocados!!!! I ususally put some slices in my salad every night...it's the good fat! :)

As for avocados, make them pick it out! thats what i make my men do! I love them to much to go with out!
