These are yummy!!!!

1/2 cup butter, softened
3 oz. cream cheese, softened
1 cup all-purpose flour
1 egg
3/4 cup brown sugar
1 tbsp butter, melted
1/2 cup chopped pecans

Preheat oven to 325. Beat softened butter and cream cheese until thoroughly combined. Stir in flour. Using ungreased mini-muffin pan, press a rounded teaspoon of pastry evenly into the bottom and up sides of each cup. Filling: Beat the egg and mix in brown sugar, melted butter and pecans. Fill each pastry-lined muffin cup with about 1 heaping teaspoon of filling. Bake at 325 degrees for about 30 minutes or until pastry is golden and filling is puffed. Cool slightly in the muffin cups, then remove and cool completely on a wire rack.

My MIL makes these all the time. Everyone jokes about how many pecan pies they can eat. LOL They are very good. They aren't quite as sweet as the real pecan pies.

You are sooooo right about them not being as sweet as regular pecan pies.... funny, I was thinking next time I make them, I'd use some white sugar, too!!!!!!
And to top it off, I didn't make the cream cheese crust b/c I'm not a big "cream cheese in sweets" kind of gal, so I just made a regular pie crust... not good!!! I scraped the crust off and have just been eating the filling!! :D Definitely not a good idea!!! :grimace:
Do not try that at home!!! LOL

Anyway, enjoy!

Can you believe it's 2 days til Thanksgiving.... AAACCCKKK!!!!!
