Does anyone have recipies for holiday goodies they would like to share???
I try to have a bunch of stuff on hand that can be set out for guests to nibble on when they drop by....any new ideas would be helpful. (cookies, bars, squares, candies..... anything yummy!!)

Frozen Peppermint Cheesecake
Ingredients:
1 ¼ cup chocolate wafer cookie crumbs (about 24 wafers)
¼ cup sugar
¼ cup margarine or butter, melted
1 (8-ounce) package cream cheese, softened
1 (14-ounce) can Eagle Brand sweetened condensed milk (not evaporated milk)
1 cup crushed hard peppermint candy
Red food coloring, optional
2 cups (1 pint) whipping cream, whipped (or nondairy whipped topping)
Directions:
Combine crumbs, sugar, and margarine. Press on bottoms and halfway up sides of two 9-inch spring form pan. In a large mixing bowl, beat cheese until fluffy. Gradually beat in sweetened condensed milk. Stir in crushed candy and food coloring if desired. Fold in whipped cream. Pour into prepared pan, and cover. Freeze 6 hours or until firm. Garnish as desired. Return leftovers to freezer.
Alternate crust: Purchase two prepared chocolate pie crusts. Follow rest of recipe.
Yield: Two 9" pies.
Cranberry Nut Bread
Ingredients:
3 cups all-purpose flour
1 cup sugar
1 tbsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
2 tsp. finely shredded orange peel
1 beaten egg
1 2/3 cup milk
1/4 cup cooking oil
1 cup coarsely chopped cranberries
3/4 cup chopped nuts
Directions:
In a mixing bowl stir together flour, sugar, baking powder, salt, baking soda, and orange peel. In another mixing bowl combine beaten egg, milk, and cooking oil. Add to flour mixture, stirring just till combined. Stir cranberries and nuts into batter.
Pour nut-bread batter into a greased a 9x5x3 inch loaf pan or two 7 1/2 x 3 1/2 x 2 inch loaf pans. Bake in a 350 oven for 1 to 1 1/4 hours for single pan or for 40 - 45 minutes for the smaller pans or till toothpick inserted near the loaf center comes out clean
Cool in the pan for 10 minutes. Remove; cool thoroughly on wire racks. Wrap and store overnight before slicing. Makes 1 large loaf, or 2 small loaves. (18 servings)
Plum Cake
Ingredients:
2 cup self-rising flour, sifted
2 cup sugar
1 cup cooking oil
1 tsp. cloves
1 tsp. cinnamon
1 tsp. vanilla
2 jars plum baby food
3 eggs
Directions:
Beat sugar and oil together. Add eggs one at a time. Then add plums and vanilla. Finally, add flour, cloves, and cinnamon. Pour into tube pan or bunt pan and bake at 350 degrees for one hour.
Glaze:
1 cup confectioner's sugar
juice of one lemon
Mix together well, and pour over warm cake.

You're awful sweet to think of your guests, but having newborn triplets in the NICU probably excuses you from having to play hostess to anyone this Christmas!

Yeah... when ARE you going to find the time to do any Christmas baking? You’re sure going to be a busy one. LOL I wouldn’t expect this from you either. Sit back and relax... take it easy! :)
Snickerdoodles
1 cup shortening
1 1/2 cups sugar
2 eggs
mix these first three ingredients thoroughly sift together:
2 3/4 cups flour
2 tsp cream of tartar
1 tsp soda
1/4 tsp salt
stir the two mixtures together. Roll into balls the size of walnuts. Dip into a mixture of equal parts sugar and cinnamon. Place two inches apart on a lightly greased baking sheet. Bake until lightly browned but still soft (8 - 10 minutes) at 400 degrees. makes 3 dozen cookies,

I am just thinking positive. My babies are strong, doing well and if all goes as I hope home by Christmas - I doubt Mitcell will be, but the girls anyway.
Besides, I enjoy baking. It is sort of a stress reliever for me. They won't let me be at the hospital 24/7 and I can't sleep when I am at home anyway, so I'll just bake off my worries. Good thing we have lots of family to eat it afterwards.

I'll be keeping my fingers crossed that your little ones will be well enough to be home by Christmas... what a wonderful gift that would be. :) (Even if Mitchell can't be... he will be soon) I can certainly understand baking being a stress reliever for you. Luckily I walk when I get stressed... if I baked I'm sure I'd eat most of what I baked so... that would't be too good. LOL I hope the babies all get to come home soon... Please keep us updated as to how they are doing. :)

Okay, let me start by saying CONGRATS!!! :happydnc:
I didn't know you were the one who had the triplets! WOW! I haven't had a lot of time to spend on postings to get to know everyone (gee, I have 1 child... you have three... what's wrong with this equation?!), but am trying!! I'm so thrilled for you! I saw the posting announcing their birth... and what sweet names!! I'm so happy for you!
Now, I can definitely relate to using cooking as a stress reliever... that's probably why I look like Pork-a-hontis at the moment!! :lol:
(actually, I prefer the term "fluffy"), so I have tons of tasty nibbley recipes!!! Check out the posting asking for dessert recipes, there are tons of great sounding recipes there!! For a change from only sweets, try these:
Sausage Treats
1 tube raw sausage
1 pound brick Velveeta cheese
1 tbsp Worcestershire sauce
1 1/2 tbsp garlic powder
1 loaf party rye bread (mini loaf)
Crumble and brown sausage in a large skillet. Drain all fat. Melt in Velveeta and once melted, add Worcestershire sauce and garlic powder. Spread dollup onto slices of bread. Bake at 350 F until cheese browns and bread gets toasty appox. 12-15 minutes.
Spinach Ball Appetizers
10 oz pkg frozen spinach, thawed and drained
2 cups dry bread stuffing mix
3 eggs, beaten
1/4 cup grated parmesan cheese
1/2 cup onion, chopped
2 tbsp melted butter
1/4 cup shredded cheddar cheese
In a large bowl, mix together spinach, dry bread stuffing mix, eggs, Parm. cheese onion,butter and Cheddar cheese. Cover and chill in the fridge approx. 30 minutes. Drop the mixture by rounded spoonfuls ontoa lightly greased, large baking sheet. Place in freezer approx. 1 hour. When ready to bake, allow balls to partially thaw, about 30 minutes. Preheat oven to 350 F. Lightly grease a large baking sheet. Bake the balls in preheated oven 20-25 mintues or until lightly browned.
Enjoy! But don't push it!!
Ok girly...I envey your ambition...here is an easy recipe for
BAKED APPLE CHUNKS
4 -5 medium apples
2 tablespoons sugar
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 - 2 tablespoons margarine
2 tablespoons water
Core and peel apples and cut into thick chunks. Arrange in 8-inch square baking dish. Combine sugar, cinnamon and nutmeg. Sprinkle over apples. Dot with margarine and sprinkle with water. Bake at 350° for 20 - 25 minutes or until apples are soft but not mushy. Serve warm with vanilla ice cream. Makes 4 - 5 servings.

Yummmmm Renee... these sound delicious. I LOVE hot baked apples (or apple pie) with Vanilla ice cream. That's my favorite dessert. Thanks for the recipe!
