Have you ever tried Rice a Roni? Those are usually always pretty good. Here's a recipe for rice. It's pretty quick and easy to make and it tastes real good too. :)

Lemon Rice...

1 cup uncooked rice
1 teaspoon margarine (optional)
1 clove garlic, minced
1 teaspoon grated lemon peel
1/8 to 1/4 teaspoon ground black pepper
2 cups chicken broth
2 tablespoons chopped fresh parsley

Directions

Combine rice, margarine, garlic, lemon peel, pepper and broth in 2- to 3-quart saucepan. Bring to a boil; stir once or twice. Reduce heat; cover and simmer 15 minutes or until rice is tender and liquid is absorbed. Stir in parsley.

Microwave Oven Instructions
Combine rice, margarine, garlic, lemon peel, pepper and broth in 2- to 3-quart microproof baking dish. Cover and cook on HIGH 5 minutes. Reduce setting to MEDIUM and cook 15 minutes or until rice is tender and liquid is absorbed. Stir in parsley.

I know that I am coming in late on this, but when I was cleaning today, I came across these two recipes that I have been wanting to try. Dh isn't much of a rice eater, so I haven't got to try them yet, but here they are if you would like too. Let me know how they turn out if you try them.:D

Red Rice
5 slices bacon fried and crumbled
1 large onion chopped
2 16 oz cans chopped peeled tomatoes, undrained
1 cup converted long grain rice uncooked
1 cup finely chopped ham
1/2 tsp salt
1/4 tsp black pepper
1/8 tsp hot sauce

Fry bacon in skillet and set aside. Cook onion in drippings over medium-high heat until tender. Combine bacon, onion, tomatoes, rice, ham, and seasonings in pot. Cook until rice is done.

Sausage Rice Casserole

1 lb bulk sausage
1 envelope (1 1/2 oz) dry chicken soup mix
3/4 cup raw long grain converted rice
2 stalks celery, diced
1/3 cup slivered almonds
4 cups water
salt to taste

Brown sausage and drain. Combine all ingredients in pot. Cook until rice is done.

Hope you enjoy:D
