View Full Version : Easy breakfast ideas
My parents come over for Santa Christmas am, and I usually do an egg casserole, but am getting tired of it. Last year, I just scrambled some eggs and had bagels. Do ya'll have any do ahead ideas for me?

I made a hash brown casserole for my last mops meeting and it was GONE!! I don't have an exact recipe...
big bag of frozen hash browns
2 cans cream of mushroom soup (you can use potato)
16 oz sour cream
2 cups shredded cheese
mix all ingredients together and pour into a 9 x 13 pan. Top with cheese and bake until brown on top. About 45 minutes at 350.
You could put ham in it and maybe make scrambled eggs. Or french toast casserole?

I do a recipe similar to angie's that also has butter in it and instead of using plain sour cream I add Top the Tator. :licklips:
I'll try to think of more ideas. My sister and mom make breakfast burritos a lot and love 'em.

I didn't add the butter because the cheese it so fattening already!! What is top the tater??

I know what you mean about the butter! Ugh! Top the tator is sour cream with onion and chives. :)

Sausage Treats
1 tube raw sausage
1 lb Velveeta Cheese
1 tbsp Worcestershire sauce
1 1/2 tbsp garlic powder
1 loaf party rye bread (mini-loaf)
Crumble and brown sausage in large skillet. Drain all fat. Melt in Velveeta and once melted, add Worcestershire sauce and garlic powder. Spread dollup onto bread. Bake at 350 degrees F until cheese browns and bread gets toasty, approx. 12-15 minutes.
(to me, these are better than sausage balls because you don't have to deal with mixing raw sausage with your hands!!!! :idea: )
Bacon Quiche Tarts
5 slices bacon, cooked, crumbled
8 oz pkg cream cheese, softened
2 tbsp milk
2 eggs
1/2 cup shredded Swiss or Cheddar cheese
salt and pepper to taste
10 oz can refrigerated biscuits
Heat oven to 375 degrees F. Lightly grease 10 muffin cups. Beat cream cheese, milk and eggs on low speed until smooth. Stir in cheese, set aside. Seperate dough into 10 biscuits. Place one biscuit in each greased muffin cup; firmly press in bottom and up sides, forming 1/4 inch rim. Place half of the baconin bottom of dough-lined muffin cups. Spoon about 2 tbsp of cheese mixture over bacon in each cup. Bake for 21-26 minutes, until filling is set and edges of biscuits are golden brown. Sprinkle each with remaining bacon, lightly press into filling. Remove from pan and serve warm.

I ususally cook homemake blueberry muffins and serve with cream cheese, butter and Orange Juice...here is a breakfast pizza my SIL makes for them and they all love...
Breakfast Pizza
1 10 oz. can Pillsbury Refrigerated All Ready Pizza Crust
8 eggs
1/4 cup half -and-half or Milk
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons butter or Margarine
1 8 oz. container chive, vegetable or regular cream cheese
8 slices crispy cooked bacon
Chopped green onions if desired.
Heat oven to 425 F Grease 12 inch pizza pan. Unroll dough; place in greased pan. Starting at center, press out dough with hands. Bake at 425 F for 6 to 7 minutes or until crust begins to brown.
Meanwhile, in a Medium bowl, combine eggs, half-and-half, salt and pepper; beat well. In large skillet, melt butter over medium heat. Add egg mixture; cook and stir until thoroughly cooked but still moist. Remove from heat.
Spoon cooked egg mixture over partially baked crust. Drop Cream Cheese bu teaspoonfuls over eggs. Arrange bacon in spoke fashion on top of pizza.
Bake at 425 F for an additional 8 to 12 minutes or until toppings are thoroughly heated and crust in deep golden brown. Garnish with Green onions.
makes 8 slices
We buy a variation of Rct's pizza. Its on regular pizza crust, a layer of chive creamcheese, topped with scrambled eggs, bacon and shredded sharp cheddar cheese. Bake until the cheese melts.
I also have a recipe for blueberry stuffd french toast that looks easy, yet i have never made. If you want that-I can scan it to you.
