Any quick and easy corn chowder recipes??

While at the beach this weekend, we had some delicious crushed red pepper and corn chowder soup. It was so good. Does anyone have a quick and easy corn chowder recipe? I would like to try to make some.

Ingredients

2 tablespoons vegetable oil
1/2 cup chopped onion
1 cup chopped green bell pepper
1/2 cup chopped celery
3 tablespoons all-purpose flour
2 cups vegetable broth
1/2 teaspoon salt
1/4 teaspoon paprika
1/2 bay leaf
1/2 cup milk
1 cup warm milk
1 (16 ounce) package frozen corn kernels
1/2 cup medium salsa
1/2 cup cream cheese, diced
1 (10 ounce) can diced tomatoes with green chile peppers, drained


Directions

1 In a large pot, heat oil and saute onion, green pepper, and celery until golden brown. Add flour and stir.
2 Stir in vegetable broth, salt, paprika, bay leaf, and 1/2 cup cold milk. Heat for 5 minutes. Stir in warm milk, corn, salsa, cream cheese, tomatoes, and chiles. Heat but do not boil.

Easy, you say?!


Go to cupboard,
get out can of Campbell's Corn Chowder,
remove lid with can opener,
pour in bowl,
stick in microwave,
nuke for 2-3 minutes!!!!

What??? Campbell's makes a corn chowder?? I have been missing out all this time. I will definately pick some up tomorrow.

Maybe I can add some toss in's to make it more like I did it???!!???

Marla - I don't do anything out of the water or sea. Another of my weird things I guess. (I can't even do fish sticks or tuna fish))
That's why I think I was so amazed at corn chowder. I asked the waitress several times. Nothing from the sea right????
And there was just bacon in it. Really yummy!!

ROFL! I'm glad I decided to be silly and post that!! I know for sure they make Chicken corn chowder, I bet they make just plain corn chowder, too! Definitely add some stir-ins, I always do!!! I love to season away!!! :drool:

Oh and yes, Renee, your recipe does sound wonderful!
