OKay...I am officially starting the daily dinner thread. LOL

Monday...15 bean soup and venison sausage, salad and fruit

No idea what we are having tonight. :\ I'm having a hard enough time deciding what to make dks for lunch! LOL!

I've already got a roast in the crockpot... will add carrots/onion and maybe the potato's (might have mashed) a little bit later. Along with a little salad and dinner rolls... that will just about do it.

Oh don't do this on our traditional Macaroni Monday. (Ds's favorite night of the week.) Little smokie sausages, black-eyed peas, and of course Macaroni and Cheese. Boring!

Haven't really thought about it yet today?
It will be something easy though since it is just Dk's and I. Dh is working until 9:30 tonight.

Will most likely have macoroni and cheese, DS #1s fave. Since my youngest doesn't like it I will make him Chicken noodle soup.

Chilli soup for the kids, probably baked fish for dh (he still can't eat spicy stuff) and a mini frozen pizza for me (I don't like chilli).

Dd2 is on a roll. Last night it was roast pork, mashed potatoes, stuffing, corn, applesauce, and gravy. Tonight she's got a baked zita in the oven, to go with salad and Italian bread.

Needless to mention, she's absolutely my favorite child today. Does that make me shallow?? (Just curious--I'm okay with it. LOL)

1 medium thin crust supreme pizza with 1/2 jalepenos (not even going to worry about how to spell that), and 1 large hand tossed Pepperoni Lovers pizza! School started today and I'm exhausted!

Well I'm a little late here. We had pork tenderloin, baked beans, fruit, and pasta salad. I really like this thread, I'm constantly trying to come up with something new for dinner.

I put a beef roast in the crock pot this morning with taco seasoning/water and a can of green chilies. I made shredded beef tacos with it. They were really good and really easy.

Wow, I was on vacation and off-line for a few weeks over the holidays...is this a new feature?! Great idea. :)

We had "sweet and salsy meatloaf" (lots of spices, very different than std meatloaf), mashed potatoes (OK, instant!), and peas. We love having enough for leftovers.

I mixed one package of taco seasoning mix with one cup of water and added one small can of diced green chilies. Poured it on top of the roast and left it in the crock pot all day. When we were ready to eat I took the roast out and shredded it with 2 forks. Put it on some flour tortillas, with some cheese, sour cream and lettuce. Yum!

If you wanted to you could shred it and put more seasoning on it and put it back in the crock pit for a little while to soak up more flavor. It might be good if you added salsa too. My dks don't like "chunks" of salsa so I didn't do that, but it might be good.

Last night we had pork roast, mashed pot....some kind of veggie? What shall I pull from the freezer today? I'm really not very hungry lately so it has been very hard to prepare dinner.

Ann post the recipe, sounds interesting.

Jen definitely going to give the shredded tacos a try. Going to get the roast tonight. Dh has a youth committee meeting tomorrow before church and I need something ready to be on the table.

We are having pork chops tonight. I make them on my Geroge Forman type of grill thing and then smother them with BBQ sauce- yum! :drool: I will probably make some mashed potatoes too just because I have a bag of potatoes in the house that look like they are going to sprout any minute now! Not usre what else I'll make to go with them- probably just ask the kids what they want.

Ann- post the chicken coke recipe please

since I was still under the weather last night....had dizzy spells and felt nausous...I made the family Oatmeal with rasins and brown sugar....it was perfect.....

Coca Cola Chicken

1 can coke (either diet or regular)
Ketchup
Whole chicken

Pour the ketchup and coke over the chicken, cook in crockpot on low 6 hours. You can put an onion in the cavity. I used a lime and also poured a little picante sauce on it.
I haven't ever done this recipe, but see it all the time in cookbooks and message boards..I will let ya'll know tonite if we ate in or out! ;)

I'm not sure with the lime and the picante sauce, but it seems like the Coke and ketchup mixed together would make it kind of BBQy.

It is just the kids and I again as dh is working again. Since last night was a skimpy meal, tonight I am going to make chicken(on the indoor bbque)mashed potatoes and carrots or corn.

This is a really neat thread, some new recipes to try. cant wait.

yep, but don't you have jalepenoes with your barbecue? LOL Lime just help to keep it moist, but I also put limes when I am making homemade sauce.

On Mondsay, we had homemade chicken fried rice.

Tuesday-Little Ceasar's pizza. $5.00 for a large pizza every Tuesday. :)

I enjoy it better then....We used to do it more....I love having a big breakfast for dinner....sasauge, hashbrowns, waffles....you name it....miss those nights.... been dieting so....

We have "breakfast for dinner" at our house at least once every couple of weeks -- especially if people show up around dinner time -- then it is really easy to whip up some pancake batter, fry some bacon and sausage, heat some syrup.

We have roast in the crockpot once every couple of weeks, too...however, it just seems so bland. I brown it one the stove before putting it in the crockpot. Salt and pepper it. Cover it with water, and add an onion. It just never seems like my MIL's -- where hers turns to a thick almost like gravy or sauce. I have asked her and she doesn't do anything different than what I wrote above. Any suggestions on how to make it not be so bland???

Does she do hers in the crockpot too? hmmm. I have found that I really need to season things well when I do it in the crockpot..while the food is tender with slow cooking, the spices don't seem to show through. Try a little red wine and a packet of onion soup mix. To thicken it, you will probably need to add some flour towards the end.

No, we don't have jalapenoes with our BBQ. Dh like banana pepeprs with BBQ but I'm a pretty bland eater.

I love chicken friend rice! How do you make yours? I've made it a time or two with a Chicken Helper box, but not in a long time.

I have no idea what we will have tonite. I just got home about an hour ago. Fried chicken mashed potatoes, gravy and corn sound good but it's too much work. Pizza hut sounds really good. dh won't be home until close to 8.

I'm munching on Pringles right now because we only had snowman soup and vanilla wafers for snack at preschool. I'm still hungry!

Somebody asked a crockpot question: I put my roasts in really low and cook most of the day till they fall apart. I have put cream of mushroom soup over it before too. Dh and the kids like it that way.

Dd3 has an away game tonight (another 11pm night...ugh), dd1 is working........so we're having leftovers or frozen pizzs. It's an official 'scrounge night'.

It was just sort of ok. I think I would mix the ketchup and coke together to a paste consistancy so that it really covered the chicken..the legs turned out great, the breast was a little dry (even with basting). The kids ate every bite, but I couldn't really taste a distinctive flavor..so the sauce didn't over shadow the chicken it was just sort nothing.

I use beef broth and a pkg of onion soup mix and lots of veggies - I could skip the meat and just eat them!!

Tonight - it WAS going to be baked chicken, boiled new potatoes, rolls and a veggie. BUT NO! My oven is dead!! So, it was all the above but with fried chicken tenders. blah :\

I am torn between a big pot of veggie soup or pasta primavera with shrimp...just depends on how I want to time my evening (I can start the soup now, but the pasta is pretty much all done at dinner time)

I doubt Cathy is worse than me in the kitchen! (Referencing one of the other dinner posts.) I kind of go catatonic and just can't get a meal together, but I have a 2 1/2 year old, so I'm working on it! I find if I can just think about it a day ahead I can actually put something together. I know that sounds pathetic to most of you!!

So, JAK, thank you thank you thank you for that "taco seasoning on the roast" idea. I did it tonight and it was a huge hit. Better than the restaurants. I did add some sauteed onions and peppers as "sides" for contructing the tortillas. Somehow, it made me feel so great to know I could pull off a fast, easy, really good meal like that! Of course, dd decided that tonight was cheese night, but I can't worry about that too much, another night will be meat night!
