For lunch today I served baked chicken, broccoli, corn, mashed potatoes, macaroni and cheese, salad and rolls. I also put out some leftover ham I had. We just had leftovers for dinner.
Creamy chicken lasagna?? recipe??
Yep..Amy..recipe please!
We are having 'loaf of meat' as my kids call meatloaf! Actually, they HATE my meatloaf and this is Stouffers! Carrots cooked in oj, rice and sliced tomatoes.
This is one of my favorite recipes and am protective of it. So if I give it, I must kill you all afterwards. LOL
Chicken Lasagna
12 cooked lasagna noodles
1 can cream of mushroom
1 can cream of celery OR cream of chicken soup
1 cup parmesan cheese
1 cup sour cream
1/4 tsp. garlic powder
2-3 cups cook diced chicken
1/2 cup sauteed chopped onion
2 cups mild ( I like Sharp) shredded cheddar cheese
Blend soups, sour cream, parm cheese, onion and garlic powder together. Stir in diced chicken and onion.
Coat bottom of 9x13" pan with mixture, layer 4 noodles per row, 1/3 of the mixture and shredded cheddar three times until you end with the cheese.
Bake in oven at 350 degree for 40-45 minutes. Let stand for 10 minutes before cutting
This is a rich recipe and I try to use "light" ingredients where I can. I use light sour cream and light soup. It makes incredible leftovers too!

I made burgers for Dinner and Fried chicken, mashed potatos & gravy, and corn for Supper. I'm sure I'll be paying for the greasy chicken before morning.

Well I had every intention of cooking, but.........
After I took the DK's to the afternoon showing of Snow Dogs, then went sledding afterwards. During sledding oldest DS had to go to the B room aand we were cold, so since my Mom lives close by the hill we went to, we went there for a quick visit.
One the way home decided I was totired and to cold to cook, so we stopped at McDonalds , not my fave, but kids like it.
Now it is 7:22pm , and they are in bed. Time to relax.

Chicken Lasagna
If you changed the cream of mushroom soup to broth and add green chilis and tortillas instead of the lasagna noodles, you would have a recipe call King Ranch Chicken or sometimes called Chicken Sopa.
Yours sounds incredible..don't kill me!!!!

How old are your kids again? Wow you have them in bed that early? We're lucky if we can even get the kids to their bed by 9 let alone asleep! Our oldest 2 (ages 11 & 10) obviously want to stay up later than the younger ones and the younger ones don't think that's fair. I miss the days of getting to relax most of the evening and get to bed by 10.
Hope you enjoyed your relaxing evening! :)

My oldest DS is 7 and my youngest DS is 4.
I put them in bed at 7, it eally helps my oldest son at school to get a good sleep.
On the weekends I let stay up a little bit later.
Aate out for lunch. Had BLT's for supper with leftover veggie soup. Amy chicken lasagna sounds great. That will be on the menu one night this week. Thanks for sharing. Don't kill me either.
