ds is pushing for us to take him to Pizza Hut for his Bookit free pizza....LOL....trying to hold him off until Friday....just easier then....I like Ann's homemade Veggie soup idea yesterday...so I have a pot going in my Crock....smells good already...

Dd is still throwing up so I think we are going to stay on the safe side and do more soup and toast. I am always waiting for the next person to start when these sicknesses hit one in the family.

I have adapted this from another recipe. It is actually a weight watchers recipe, so very healthy and low fat.

2 oz shredded/grated cheddar cheese
2 large potatoes, scrubbed and sliced
6 oz diced cooked chicken breast (or 1/2 lb browned lean ground beef)
2 C tomatoe sauce (I used a vegetarian one)
1 C salsa
2 bell peppers, diced
1 onion, diced (I use 1/2 a red onion)
2 tomatoes, diced
dash ground cumin, garlic powder, and chili powder
1/2 tsp fresh ground black pepper

Combine last 8 ingredients in a saucepan. Warm and cook for about 20 minutes. If mixture is too thick, add addtional salsa or tomatoe sauce. Remove from heat.

In a 13x9 baking dish, spray with cooking spray. Layer 1/2 potatoes in bottom of dish. Cover with sauce mixture. Layer remaining 1/2 of potatoes. Cover with remaining sauce. Cook in 350 degree oven for 45 minutes.

Remove from oven. Sprinkle with cheese. Return to oven, cook 15 additional minutes.

Remove and allow to sit for 15 minutes.

It's wonderful with fat free sour creme!

I think I'll make spaghetti and meatsauce with a salad for dinner tonight. I went shopping and bought tons of veggies :licklips: so I think I'll also make either some steamed broccoli or cauliflower (I'll be the only one who eats it though :\ )

I had a yummy Smart Ones (Weight Watchers) teriyaki chicken/rice dish for lunch and loved it so much, I may go get another for dinner! YUMMMM - and only 5 pts.

It's a tomatoe sauce that is full of other veggies and soy.

Donna, I wondered the same thing. We had a big laugh over it in the lounge. I really should have figured that one out because my favorite spaghetti sauces is the chunky vegetable.

Kathy, I'm giving this recipe a try latter this week. Going with turkey lasagna tonight with a garden salad and garlic toast.

We're having left-over pheasant (with a gin/wine/raisin/grape sauce) and wild rice with red cabbage. New recipe and the best I've ever had.

The DK's and I are having chicken breasts baked in the oven with potatoe chips on it, mashed potatoes, gravy and was going to serve corn but noticed I was out so it will be apples instead. Good thing it is almost payday, I really need to get out and get groceries especially vegis which I am now out of.

My MIL fixed our dinner tonight. Ham, mashed potatoes, green beans, fruit, salad, rolls and lemon lush for dessert. Yum!

vanilla ice cream. DD and Dh - I resisted!!


Last night's mystery meal - I ended up cooking when we got home from dance. Dh had a meeting with his manager till 8:00.
We had frito pie and salad. Something quick and simple since it so late.

Yes, it really is pheasant...I know because my BIL shot it and my dd watched him clean it! :p

Guess she's not at the age yet where that bothers her. She even wanted to see it as I was cooking it and asked if we were eating the tail feathers...

The breast meat was good, the leg meat required too much work to get it off the bone - I don't like to have to work at my food once I sit down to eat! Of course, I think it was mostly the sauce that made it so good.

If anyone is interested, I would recommend tryingwild rice. My in-laws, who are mostly midwest meat and potato people loved it once they agreed to try it!

LOL! I know what you mean about just wanting to eat when you sit down. Ordered crab legs last time we went to Red Lobster and it just about drove me nuts! Dks and dh were done long before me. :rolleyes: Glad the pheasant was good! I also like wild rice and would love to hear how you prepare yours. :)
