I am going to fix a pot of chili today. It is supposed to get cold today. Probably fix some grilled cheese to go along with it.

Today is take out night for us. I have to take a layered salad for the college meal tonight, so I'll be having that and whatever else is being served. Dh and ds will probably get pizza or sonic.

pineapple chunks....

I did make the kids Chocolate Jello Pudding..using soy milk...LOL...so we have a desert..:biglaugh:

Kathy, what's baked pasta? I usually just boil mine.

We are either having leftover veggie soup or chicken/veggie stir fry..depends if dh has a meeting tonite or not.

Totally non-motivated to cook, but we just sent out for pizza last night. hmm..

tonight will either be spaghetti and/or beef red stroganoff

I boil mine too, lol. This is boiled, drained, then tossed with an egg, parmesan cheese, olive oil, and pepper, put into a pie plate, and baked for 15 minutes. It is simple and delicious.

I really like this thread too :)

I think dh and I will have pasta with a tomatoe sauce (have some homemade in the freezer)...now the pasta; I'd want penne and dh would want spaghetti so we'll duke it out later on to see who wins, lol.

Ds is sick today so I have no idea what to make him...he doesn't like soup.

We're having pork chops with mexican-style rice and fruit.
Kathy, your pasta sounds good maybe I'll do that tomorrow.

In a big clear bowl on a pedistal (I think it's called a truffle bowl) I put in a bag of mixed lettuce, then add layers (as opposed to tossing) of whatever I want. I usuually try to arrange it neatly around the edge of the bowl so you can see the layers. Tonight I'm adding a can of English peas, tomatoes, purple onions in rings, bell pepper rings, cucumber slices, boiled egg slices, and topped with cheddar cheese. Then before serving, I add the dressing (mayo, sugar, a little milk, and vinegar all mixed to taste). It really is a pretty salad and tasty too. It's a meal in itself.

DH is out with his friends tonight.

Kids go to an early program tonight, so they'll probably just have Macaroni and cheese.

Kathy, I do a similar recipe. After I've done the above I press it into a glass pie pan sprayed with Pam. Then I spread on a thin layer of cottage cheese and top with a mixture of browned ground meat, onions, garlic, and tomato sauce. It's called spaghetti pie. Yummy. I'd love just the pasta as well, but my family wouldn't.

Sheila, it has never even dawned on me that that dressing was just like my own cole slaw dressing. I rarely make cole slaw, I guess that's why. I do make this salad alot for pot lucks.

I just don't know. How do you ladies decide what the menu will be. I am terrible about this. Especially on days like today!!

That's why I usually plan at least a 3 to 4 meals at a time when I grocery shop to help me on days when I don't want to cook. Plus, I keep a pretty stocked pantry and freezer in case what I planned sounds yucky to me that day, I can improvise.

Karla- What's tator tot hotdish?

We are having crockpot enchiladas. I haven't made them in years, in fact don't think my kids have ever had them- I'll let you know if they aprove or not! I'll type the recipe in case anyone wants to try them sometime.

Crock Pot Enchiladas

12 small corn tortillas (rip them into pieces)
2 cans cream of chicken soup
2 cans of milk
2 (big size) cans chicken breat (or cooked cut up chicken)
1 block (8-10 oz) cheddar cheese (cut into cubes)
1 block jack cheese
1 can chopped green chilies

Put in crock pot, stir. Cook until heated through and cheese is melted. It doesn't have to be in the crock pot all day.

I finally decided.

I am making Renee's soup from the soup thread.
cept, I added brown sausage and chicken bullion (cause I didn't have the other kind) It smells good.

I have just put in grand's buttertastin' biscuits.

Cut up some fruit and we are good to go.


Good thing cause it is almost 5:30!!!

kat, this sounds so good I am going to haev to try it, I am always looking for different things to do with pasta.

Tonight soup for Dh and youngest DS, the oldest DS wants left over taco's.

As for me I am going out with a few friends for a rare dinner out. We are going to a place that I haev only eateb cheesecake from( and it is the best cheesecake I have eaten so I am looking forward to eating a dinner there.

Brown a pound of ground beef. Add a little onion.
Put in a casserole dish and mix in:

top with a layer of tator tots
