View Full Version : Acron Squash recipe for oven please?

I bought two lovely acron squashes yesterday, I thought dh and I could have these durning the week...well....and they had recipe stickers on them...but they are microwave directions....argh....does anyone have a good in the oven recipe...remember I am slow so I need oven temp, and how long......and really simple instructions...I know you can do them with butter and sugar...but I don't know how? sad huh:( thanks in advance...

Acorn Squash


Ingredients:
1 acorn squash
4 tablespoons margarine or butter
1 dash salt
1 dash pepper

Cut acorn squash in half, length-wise. Scrape out seeds with a spoon. No need to peel. Cut each half in half again. This, of course, means the squash is now in quarters.

Add a pad of butter to the hollowed-out side of each quarter. Sprinkle on salt and pepper. Place on baking dish and put in 375 degree oven for about an hour.

OR

Acorn Squash:

2 medium acorn squash
3 tablespoons butter
2 onions, thinly sliced
3 cloves garlic, minced
1 teaspoon ground coriander seed
1/2 teaspoon freshly grated nutmeg
1/2 teaspoon salt
freshly ground black pepper


Directions

1. Preheat the oven to 375 degrees F (190 degrees C).
2 Cut acorn squash in half. Roast them cut side up on a baking sheet for 50 minutes or until the flesh is just tender. Let the squash cool for 20 minutes.
3 In a large skillet over medium heat melt the butter; saute the onions. Stirring occasionally, cook the onions for 10 minutes, or until they begin to brown at the edges. Mix in the garlic, coriander, and nutmeg. Cook the mixture 2 minutes more; then remove the pan from the heat.
4 Spoon the seeds and stringy middle out of the squash, and discard these. Spoon out the flesh, chop it and add it to the onion mixture. Discard the skins. Heat and stir the squash-onion mixture, then season it with salt and pepper. Serve the squash hot.
