I need a good Mexican recipe for children. My son is doing a report for his 3rd grade class on mexico and they can bring in food to fit their country. Does anyone have any good Ideas that he can take that you won't have to keep heated and relates to Mexico? The report is this week. Thank you,

Let me DIG through my stuff from monitoring the Spanish ITV class. We made a meal when the teacher came to visit. Give me at least a day to find the recipes, I'm pretty sure I kept a copy.

These weren't the recipes I was looking for, but...
I took this from MEALS OF MANY LANDS - A Cookbook for Children.
MEXICO
Because Mexicans enjoy a mild climate and generally fertile soil, they have many fruits and vegetables to use in their dishes. Maize, a type of corn, is the mainstay, with squash, tomatoes, beans, onions and many tropical fruits to add flavor. Cheese made from goat's milk is also inmportant in the diet. The bread of Mexico is the "tortilla," made from corn. "Frijoles" (beans of various kinds) are as old a food as maize and furnish an inexpensive protein. Mexicans enjoy drinking cocoa, coffee and other "refrescoes" of fruit juices sweetened with fresh honey and brown sugar. Hot herb drinks such as camomile, oregano and sage tea are also served with meals.
Guacamole Salad
2 - 6 oz cans frozen guacamole, thawed
1 large tomato, chopped
2 tablespoons bacon bits
1/2 tsp hot pepper sauce
6 lettuce leaves, rinsed and drained on paper towels
36 tortilla chips
Spoon guacamole into mixing bowl. Add tomato, bacon bits and hot pepper sauce. Mix well. Cover and refrigerate. To serve, arrange lettuce leaves on serving platter. Spoon 6 equal amounts of guacamole onto lettuce leaves. Stick 6 tortilla chips into each serving. At the table, pass the platter and let guests help themselves.
Lime Sherbet with Strawberries
1 quart lime sherbet
1 - 16 oz. package frozen sliced strawberries, thawed
Spoon sherbet into bowls and top with strawberries. Serve with Mexican Cocoa.
Mexican Cocoa
4 cups milk
1 4 oz. milk chocolate candy bar
1 tsp ground cinnamon
1 tsp vanilla
Pour milk into saucepan. Add the chocolate and stir over medium heat until chocolate is melted. Remove from heat and add the cinnamon and vanilla. Set aside. At serving time, return to heat and beat the mixture with a wire whisk until it is frothy and hot. Pour into cups. Serve with lime sherbet.

I do not know how mexican it is, but you make them with flour tortillas.
You can use whatever size you want, but cut the flour tortills in chip size strips, spray with cooking oil, and shake in a baggie with cinnamon and sugar. Bake in the oven @ 350, for 8-10 min. They are alot like the cinnamon crispies at Taco Bell but crunchy. My kids will eat a whole package of tortillas.
