We are having sandwich/salad night....grilled cheese or egg salad for the kids...thier choice...dh and I are having bagels with creamcheese and tomatoe slices....my favorite....salad of course
We are having pork tenderloin tonight. I'm not sure how to cook it though. Usually do it on the grill, but not tonight. Has anyone ever done one in the crockpot or should I just put it in the oven?

Tonight I am going to make pizza hotdish... I'll post the recipe in case anyone is interested. Dks love it! :)
Pizza Hotdish
7 oz spaghetti
1 lb hamburger
1 large jar pizza sauce
2 cups mozz. cheese
3 oz pepperoni
onion to taste
Cook spaghettii
Brown hamburger with onion
Put spaghetti in a 9x13 pan, cover with hamburger, spread pizza sauce over hamb, cover with cheese, pepperoni on top.
Cover with aluminum foil
Bake @ 350 for 45 minutes (remove foil for the last 15 minutes)

I like my pork tenderloin cooked in the oven and in the crockpot. I usually cook it with a little lemon juice.
Didn't cook that chicken last night, probably will tonite.
I usually do mine on the grill too, but I have a friend who cooks her's in the crockpot with some cranberry sauce..says it is wonderful.

I always put my pork roast in the crockpot. Dry onion soup mix in the bottom, drop in the roast, can of jellied cranberries smeared on top. Make gravy with the leftover juice.....DEElicious!
We are having leftovers tonight.

Took out some boneless skinless chicken breasts, not quite sure what I am going to do with them though. It is hard to do something new since the kids are picky. So I am going to think sbout it..and maybe look through my cook books...
Karla that sounds yummy. I do my pork roast like Angie said except I cook mine in those oven bags like for turkey. No idea what we'll be having tonight. I took nothing out. I think the only thing in the freezer is breaded chicken strips and hamburger.
The pork tenderloin I have is salsa flavored. Usually we grill it and eat it on flour tortillas like a taco with all the fixings. It's so good!
I think I might just stick it in the crock pot with some rotel. We had tacos (with corn tortillas) last night, and I don't think the family will mind having pork tacos tonight. I'll let you know if it turns out.

I made some home made potato soup this afternoon... so we'll probably only have potato soup/salad and maybe a sandwich... nothing much!

I threw some soup together, along with bread and salad that will do it.
Karla, thanks for the recipe I'm going to make that tomorrow. Would have done it today but we're out of cheese.

We are having tater tot casserole.
Recipe for anyone that wants it....
TATER TOT CASSEROLE
ground beef
can of cream of mushroom soup
can of cream of chicken soup
garlic powder
tater tots
shredded cheese
Brown ground beef and drain. Sprinkle ground beef with garlic powder. Mix ground beef with both cans of soup. Layer in casserole dish. Fry tater tots. Layer on top of beef mixture. Sprinkle with cheese. Bake in oven on 400 degrees until cheese is melted.

I ended up making chicken fried rice with the chicken I took out, and I also made a caesar salad with red onion....yummy

I'm SO sorry... I didn't see your post. If you're still interested... here is the recipe I used. There are a lot easier ones... but not as tasty. This is REALLY good, and it went fast. :)
POTATO SOUP:
1 onion, chopped
1/2 cup chopped celery
1/4 cup chopped carrots
2 cloves garlic, minced
2 tablespoons chopped fresh parsley
5 tablespoons margarine
4 tablespoons all-purpose flour
1 1/2 cups chicken broth
1 1/2 cups whole milk
3 potatoes, cut into 1/4-inch slices
2 teaspoons Worcestershire sauce
1 1/2 teaspoons mustard powder
1 pinch ground allspice
3/4 teaspoon celery seed
1/2 teaspoon dried thyme
1/2 teaspoon seasoning salt
2 tablespoons dry white wine
1/4 teaspoon ground cayenne pepper
1/4 teaspoon chicken bouillon powder
Directions...
1 In a large stock pot, saute onion, celery, carrots, garlic and parsley in butter until soft but not browned. Sprinkle in flour and cook, stirring for 2 minutes. Add broth slowly, stirring as you add.
2 Add milk, potatoes, Worcestershire sauce, dry mustard, allspice, celery seed, thyme, seasoning salt, dry white wine, cayenne pepper and chicken granules. Allow to simmer and thicken, stirring frequently, until the potatoes are cooked through, approximately 25 minutes. During cooking, break up potatoes with the back of a spoon. Serve warm.
I made a double batch and had planned on freezing the other half... but it ALL went so didn't get to. I'm going to make more this week and hopefully I'll get to freeze some for another time. :) If you make it... I hope you enjoy it. :)
