YUM, Renee!!!!! What is the liquid base for your stew? Recipe please.

I have Angie's pork loin recipe in the crock pot. AND I put it in frozen (didn't thaw last night!) so I am trusting all of ya'll that it will work. LOL

We are going out for pizza tonight. My son, who I can never get to eat a slice of pizza, went to a cousin's church valentine's party saturday night. They served pizza and he ate it! He told my MIL, who took the two kids to the party, that he loved pizza, couldn't believe he never ate it before, and that we needed to go out for pizza more often. We have pizza once a week! So, tonight after scouts, we are going to Pizza Hut! My favorite.

It's FAT Tuesday here..time to party down and be a glutton!!!! LOL
What is Shrove Tuesday and what do the pancakes mean?

My understanding of Shrove Tuesday (Fat Tuesday, Mardi Gras or fetter Dienstag) is the day before Ash Wednesday, the beginning of Lent. Since Lent is a time of abstinence, traditionally of meat, fat, eggs and dairy products Shrove Tuesday's menu was designed to use up all the fat, eggs and dairy products left in the kitchen, hence pancakes. I think way back meat was consumed too but we always just had stacks of yummy buttery pancakes, lol.

ROFL! and my understanding was since you were starting the fasting tomorrow..today, you party! LOL Hence, the big Mardi Gras parties today.

Yep, same purpose, different name, lol!

Do you celebrate it down there? Parties?? Special foods?

My dks were having the most hysterical conversation this morning about what to give up for lent. Things have changed since I was a kid, ROFL!

The big balls were Saturday night here (well, actually in Galveston). Nothing really today. I was teasing dh that we needed to get some wine for tonite! I am already cooking a big diiner. In New Orleans, today is a huge day of parades...no school. I think that's even all over LA too.

When I was growing up Protestants didn't really "do" lent. It still kind of flips me out a little when I have friends giving up stuff, but it doesn't hurt to do it! ;)

We are having chicken enchiladas tonight. Yum- I just love Mexican food! I think I'm going to make them this afternoon when my dh is home and can help out.

We are having sausage and, I'm hoping, scalloped potatoes...depends on how much time I have to get them cooked as ds swims at 7:00. Not sure of a veggie yet...maybe brussel sprouts.

Thank you, Kathy. Now picture me running to the store (with my new windshield!!:) ) to get some sausage and bacon. My Dad'll flip if I make meatless meals 3 nights this week. I love pancakes for dinner, but the girls whine. Shrove Tuesday is about the only day I can get my fix anymore.

I still have no clue what I'm going to make for supper. It's just going to be dh and me... and I hate just cooking for two. If I had my way we'd just go out by ourselves and enjoy a nice dinner out... but were going to do that on Friday so..... I might have to go dig around in my freezer to see what I can find. Either that or I'm thinking I might go to Simek's after all the kids are picked up and pick up something quick to stick in the oven/microwave. :) THAT sounds more like something I'd like to do... LOL :biglaugh: Can you tell I'm feeling lazy today? After working with the kids to get their valentines done for their parents... I'm exhausted! LOL

Should have been more clear. I knew Episcopal, did since they retained quite a few of the Catholic traditions from their history with Roman Catholic church and Church of England before they separated. I was really thinking more of the Methodist and Presbyterian.

What's your recipe?

Pretty easy and not very fancy, just time consuming.

I cook and then shred chicken breast, add some shredded cheddar cheese and red enchilada sauce. I fry up corn tortillas (very quickly, just to get them soft) and then put the chicken mixture in tortillas and roll them up. I then top them with more enchilada sauce and some cheese and bake them at 350 for 30-40 minutes. Top with sour cream and eat. YUM! :)

Sounds great. I do a green chili sour cream salsa with mine, but red sauce sounds good. I soften mine in chicken broth or just the salsa..works pretty good.

And two of my neighbors. I made a huge pot of potato Soup.

Dh had to be at church early so he had a PB&J. The soup finished just as he needed to go.

My neighbor has a growth in her abdomen. She is really worried about it. She had a test today and is waiting for the test results. They will want to do surgery for it.

The other neighbor was here as I was dishing out the soup. I felt bad by not offering it, so I gave her some too. I still have a big bowl left over. It is like the loaves and fishes story. There was enough for everyone.

Now, what to make for tomorrow????

How do you make them with green chili sour cream salsa? That sounds really good!

Jen, can you get tomatilla salsa there? If not, mix chopped green chilis, sour cream, cilantro, little lemon or lime juice and a little chopped avocado (not much)...heat it all together.

I've never looked, but I will next time I go to the store. Sounds good, thanks!

If you can (and look for green chili salsa too) mix it with the sour cream and chopped cilantro to taste.

Yum..... I just LOVE potato soup. When I made mine I couldn't believe how fast it all went. I even tripled the recipe and it barely lasted. I guess that means that it must have been good. :biglaugh: I love it when I make something and everyone actually likes it... which is pretty unusual around my house.

I ended up making chicken, broccoli, scalloped potato's and a salad for our supper tonight. Not bad for someone who had absolutely no intentions of cooking supper... LOL

After supper I made a huge pot of Cream of Broccoli Soup for Thursday or Friday nights supper. I have no clue what I'll put with it but... it IS good. :)
