View Full Version : Creamy Italian Chicken

This is so simple and yummy!
Place 4-5 boneless skinless chicken breasts in croockpot
Cover with either Italian dressing in a bottle (or a dry packet of Italian dressing with 1/2 cup of water)
Cook until chicken is done and then shred chicken with a fork.
Mix 8 oz cream cheese with a can of cream of chicken soup.
Pour over chicken. It's ready to serve when heated thru. (You can also add mushrooms) If I am in a hurry I warm the mixture in the microwave before adding it to the chicken.
This can be served over rice or pasta - I serve it over fettucini noodles. :drool:
Sounds rich, but very yummy! I think I am going to switch to the Atkins diet so I can eat all this rich, gooey, wonderful things! LOL

It is rich, but I use fat free soup and cream cheese. :)

Well, why didn't you say that I could use those!!!!!!!!!?????????!!!!!! LOL
but I still think it would be fun to be on Atkins and be ENCOURAGED to eat all the fattening full strength stuff!
Anyone here do that? I have had friends who have great success with it AND even lowered their cholesterol, but I just can't wrap my head around the logic of it.

ROFL! Well, now you know. I actually use fat free or low fat products whenever possible.
My uncle did the Atkins diet for a year, lost over 40 pounds and has kept it off. Don't know if I could do it though - with my luck something wouldn't work out right with my body and I'd gain weight! ;)

My sil did it and lost a lot of weight. (I'm not sure of the exact amount she lost, but she looks like a different person) I think with the Atkins diet though you aren't supposed to use low fat or reducted fat versions of ingredients because the sugar content is usually higher than the regular item.

With Atkins you use the high fat version of everything! Plus you have butter, bacon, sour cream...all sorts of high fat stuff. It's the carbs that you can't eat, not only in the breads and pastas but alot of fruits and veggies. That's why I have a hard time believing that it can be healthy.

I don't think I've ever heard of the "Atkins" diet... I'm going to do a search to see what it's all about. It sounds "different" though. :)

It's been around for years. Dr. Atkins started the whole "no carb" concept. I remember girls going on it in college. He revamped it a few years back cause of criticism, and it became the "new" Atkins diet.

I went on a version of it before I left Germany. The diet that I went on was called the Carbohydrate Addict's Diet. It was close to the Adkin's diet, but you could eat anything that you wanted one meal a day as long as you did it within 60 min. I felt that this one was healthier because you could get in some fruits and carbs at the one meal. I lost ten pounds on it, and I kept it off until I really started eating poorly again, so that was my fault.
If anyone is interested, let me know, I have the book on it.
Eat a meal within an hour?? An hour of what or finishing it in an hour?
I would be interested in hearing more about it, do you eat all sorts of fats in it too?

You are allowed a "reward meal" once a day, with the only restriction being (I believe) that you have to finish the meal within one hour of starting it. I was on this diet for a while, and had some really good success. Yes, you can pretty much eat what you want for your two "carb free meals"...just no carbs, or under 1 or 2 grams of carbs. Some fruits and veggies were off limits, until your reward meal. It was kind of nice because you never had to deprive yourself of anything....you simply saved it until your reward meal. (ie...if there were donuts at school in the morning, I'd grab one, wrap it up and save it until my reward meal.) I think the whole concept has to do with the way your body uses/produces insulin. It's an interesting concept, (I think the author's last name is Heller.) and I did see results. My biggest problem was breakfast. I have to eat in the morning (or my day just doesn't start out right!), but I got SICK of eggs, sausages, bacon, etc. Ugh! That got to be kind of a roadblock for me, and eventually I got off of the diet. Dh still uses alot of these principles....he tries to eat carb-free during the day, and only eats carbs at night.
