View Full Version : WW recipe ~ Whoopie Cookies

Two girls at work joined WW today so I raided their books for recipes! Just got finished making these and they're deee-lish!!

Whoopie Cookies

1 cup all purpose flour
¼ cup unsweetened cocoa powder
1 tsp baking soda
¼ tsp salt
½ cup sugar
¼ cup solid vegetable shortening
1 egg white
½ cup low fat (1%) milk
¾ cup marshmallow spread

Preheat oven to 425º. Combine flour, cocoa, baking soda, and salt in small bowl. With an electric mixer on medium, beat the sugar, shortening and egg white until fluffy and well blended, abut 2 minutes. Stir in the flour mixture, then milk, until just blended.
Drop the dough by spoonfuls onto large, ungreased baking sheets, making 36 cookies. Bake until top springs back when lightly touched, 5-7 minutes. Cool completely on the sheets on a rack. Spoon 2 teaspoons marshmallow spread on the bottoms of half the cookies. Top with the remaining cookies. Store in airtight container for up to 3 days.

Very easy to make, too!!!! :yippee:

oohhhh...get their point books and post those!!! LOL To avoid copywrite problems for the Lesters we can call them IB points!!!

I make these a lot, aren't they yummy??

They are 2 WW, errrrrrrr, IB point per pie, ROFL.

I also have an awesome 1 pt per cup hamburger and veggie soup recipe if anyone wants it. It is my staple. I make a big batch every two weeks and freeze it in 2C portions, and have that for lunch with a pita, only 4 pts.

Who else is counting points?

I think I'd count points if I knew how many points were in things and how many points I can have per day. I can't afford to pay WW to tell me! LOL

I am, and I do...want you recipe....I live on the 0 point soup with a veggie burger on an english muffin....3 points for lunch...LOL..

1 lb extra lean ground beef
1 med chopped onion
2 lg carrots sliced
2 lg stalks celery sliced
1 28 oz can diced tomatoes
1 10 oz tin tomato soup
2 10 oz tins consomme and 2 tins water (or 6 cups beef Broth
OXO or Bovril)
3/4 cup pearl barley

Saute beef and onions, drain and then add carrots and celery. Cook for 3- 5 minutes
Add remainder of ingredients.

Bring to a boil and simmer for 2 hrs.

I use crushed tomatoes instead of diced, gives it more of a stew cosistency. I also add a bag of cole slaw and some french green beans.
