I'm making Karla's creamy Italian chicken tonight! It sounds so good- I can't wait to try it! :)

Dh has practice until 5:30, he and youngest ds go to the firestation at 6, and oldest ds and I have haircuts at 6, so I think it'll be leftover soup for us! :drool:

I froze the rest of Angie's pork loin, so I am turning that into shredded barbecue pork sandwiches.

Let's see, I am cooking for two other families tonight. One is my neighbor. She finally comes home from the hospital. The other is a family from Church who has had a death in the family.

I shall make Mac N Cheese with ground hamburger for the family with the death. Jello, and salad. (They have a young son 2 yrs.)

For my neighbor - I am thinking about Nacho Potato Soup with a salad. (I will call first to see if there is any restrictions on her diet)

For us - Hopefully left-overs from one of the above meals.


Last night I did broil the steaks, fried potatos and onions, and a salad. (Steak wasn't so great, but it was ok!!)

homemade burgers/cheeseburgers {yes will real meat} LOL :lol: for the kids and I...dh gets a Boca Burger....all the fixings...tomatos, lettus, onions, pickles ,hot peppers...you name it...LOL..we have hashbrown potatoe patties and a salad....sounds good to me....:) been along time since I had a real hamburger homemade.....using the foreman grill....:licklips:

I took boneless pork chops out, not to sure what to do with them yet, but I better decide soon...lol

We are having Karla's chicken too! I came home at noon and put it in the crock pot...then after school added the soup/cream cheese. It sure smells good! :drool: I am going to cook some broad noodles to serve with it.

Since I was home today I made some garlic herb bread in the bread machine. One of my students gave me an assortment of bread mixes for Christmas. It was scrumptious. Also some minestrone soup. Dh and ds have gone to church. I decided to stay home since I had no makeup on. Thought I'd check in here, then it's back to the heating pad and the couch.

I can't wait to try the creamy Italian Chicken. Right now all I have is a cut up fryer or I'd have made it today. Also have no noodles and we had rice last night.

Jen - Your soup recipe. It really is yummy!! And easy too!

1 pkg of au gratin potatos and mix
1 can whole kernel corn ; drained
1 can rotel (tomatoes and green chilies mixed); undrained
2 c water

2 c milk
2 C cubed process american cheese

In a 3 quart sauce pan, combine the contents of the potatos and mix, corn, tomatos and green chilies and water, Mix well bring to boil. Reduce heat; cover and simmer for 15-18 min. or until potatos are tender.

Add milk and cheese. Cook and stir until cheese is melted.



DD loves this as a dip for her tortilla chips.

Broad noodles...just wide short noodles...maybe you call them egg noodles?

I haven't used my forman grill much yet....should try hamburgers....everybody here would like that!

BTW....the creamy italian chicken is fabulous! :drool:
Think we'll have the leftovers tomorrow with rice.

Sounds easy and good. I'll have to make it one night when dh is home for dinner. I think he'd really like it.

I loved it. My ds is funny, he's picky about the way that things look- he said "it looks like throw up, but it does taste good!" Boys I tell ya! I made both rice and noodles. Dks wanted the rice and I knew that dh would want noodles with his left overs. I tried both and I liked it with noodles the best. Dd liked it too and even got seconds.

Thank you Karla- it was a success in our house and will definitely be made again!

Jen ~ LOL about your ds! I've never tried it on rice...maybe one of these days. :)
