I have absolutely nothing planned yet. What's in your oven today?

It's just dh and I tonight so I think we'll just end up going out. If not I've got a frozen meatloaf in the freezer. :) I've got about 8 meals frozen... so if dh doesn't feel like meatloaf... there is always something else to pick from. :)

Tacos with fresh salsa here.
Trying to decide bean Bean Soup or Chili.
Sweet and sour pork chops are on the menu today, but I don't want to serve rice with them as I'm planning on rice tomorrow with a sausage dish I make. Can I serve mashed potatoes do you think?
Bev, how about extra veggies instead of any starch. If not, noodles would be good with the sauce.
I swear Im old mother hubbard and my fridge is bare!!! LOL I need to hit the grocery this morning and buy some healthy food choices. Tonight will be turkey sandwiches on whole wheat bread and carrots with ranch dressing for dipping.
I'm making chicken pot pie tonight, still haven't picked a recipe yet but they all sound good.

I'm making turkey pot pie! I didn't get to the store yesterday to get some of the stuff that I nneded to make the chicken pot pie last night, so we are having it tonight. I had some turkey tenderloin in the freezer, so I'm going to use that instead of the chicken. I can hardly wait!
:D baked Ziti for us...with salad and green beans as a side...oh and I made chocolate pudding for dessert tonight.....:licklips:

We ended up having tortilla soup last night. I am thinking chili tonight. May be the last time to make it, for summer is coming..

A couple of people have mentioned tortilla soup. I've never made it before. Anyone care to share the recipe? Thanks!
Here's one..there are so many variations, this is a fun recipe to adapt and play with.
2 teaspoons Olive oil
1/3 cup Diced onion
1 teaspoon Minced garlic
1 Jalapeno pepper -- seeds
and minced
8 cups Rich chicken stock -- canned
bouillon
1 cup Fresh diced tomatoes (or can rotel tomatoes)
1/2 cup Tomato juice
2 tablespoons Chili powder
1 tablespoon Cumin
2 teaspoons Oregano
Cooked chicken diced
2 teaspoons Chopped cilantro (I used more)
Cooked chicken diced
Corn tortillas cut into strips
Montery Jack cheese -- grated
Avocado cut into cubes
Saute first 4 ingredients in a large saucepan until onions become transparent. Add next 7 ingredients and heat to a boil. Reduce heat and simmer for 30 minutes. Add cilantro and simmer for 5 minutes more. You can also cook this longer, which I do, then add the cilantro at the end.
To serve: place . tortillas in individual serving bowls. Ladle in soup. Add 1 heaping Tbsp. Monterey Jack Cheese and some avocado.
I think this serves 4. I double, triple...

Tonight we are having chicken breasts, mashed potatoes, gravy and probably corn.....
THough it would be a great day for chili, since it hass been snowing all night and it is still snowing at 10:00am, but I dont have the stuff to make it, and it the roads are to horrible, so I dont want to drive to much.

I have never been able to follow a recipe that has more than 8 ingredients.
Here is the Lazy Woman's version
1 large can of Campbells chicken and rice
1 lg can of water
1 can of rotel (tomatoes and green chilies mixed together and chopped)
1 can of ranch style beans
For guests I do add chopped cooked chicken.
Simmer this all together and serve with tortilla chips, cheese, sour cream, etc....

How do you make baked Ziti? I don't think I've ever had it before.

Thank you Ann and kacee, I will have to try it, sounds yummy. Ann do you put the strips of tortillas in the bottom of the bowl and then ladle the soup on top of it?
Kathy, yes, I usually just cut them with my kitchen scissors, and then put them in the botton. This crockpot recipe below has you bake them to crisp them, I don't bother, but that is more "restaraunt style"
Here's on for the crockpot.....
Tortilla Soup for the Crockpot
Note: This is for a 5-quart crockpot, which is larger than the usual. Cut down the proportions if you have a smaller crockpot.
1 c. chopped green onions or
2 white or yellow onions, thinly sliced
2 t. ground cumin
2 cloves garlic, minced
4 cans (14-1/2 oz. each) fat-free chicken broth or
8 c. homemade chicken broth
2 cans (14-1/2 oz. each) Mexican-style stewed tomatoes
6 T. fresh cilantro, minced or 2 t. dried cilantro (if you don't like the taste of cilantro, substitute parsley)
1/4 c. lime juice
3 c. leftover chicken or turkey, chopped
Put all ingredients except the chicken into the crockpot. Stir. Cook on low for about 8 hours. About one hour before serving, add the chopped chicken or turkey. When ready, ladle into bowls and sprinkle with Crispy Tortilla Strips (see below).
Crispy Tortilla Strips
Preheat oven to 350 degrees. Use a pastry brush to lightly coat the top sides of four large flour tortillas with olive or canola oil. Sprinkle sparingly with salt and ground pepper. Cut each tortilla into 1/2-inch wide strips, and then cut the strips into pieces that are about 1 inch long. Place the strips in a single layer on a cookie sheet. Bake at 350 degrees for about 10 minutes, or until crisp and lightly browned.
