Old-Fashioned Swiss Steak

1/4 cup flour
1/4 tsp salt
1/4 tsp black pepper
1 pound top round steak, well trimmed and cut in 4 portions
non stick cooking spray
1 large onion, sliced
1 cup no-added-salt beef broth
1 tsp dried parsley

Combine flour, salt and pepper in plastic bag. Add round steak to the bag and shake to coat. Spray a heavy nonstick skillet with cooking spray. Heat over medium heat. Add round steak and brown both sides. Top with sliced onion. Add broth and parsley, then reduce heat to medium-low. Cook on the stove top for 1 1/2 hours, or transfer to oven and bake at 350ºF for 1 1/2 hours.

Makes 4-4oz servings. Calories: 190 Fat: 7g Cholesterol: 66mg Sodium: 190 mg


Fresh Tomato Soup

6 large fresh tomatoes, stemmed, peeled and quartered
1 large carrot, peeled and cut into chunks
1 medium onion, cut into quarters
1 green pepper, stemmed, seeded and cut into wedges
2 ribs of celery, cleaned and cut into chunks
1 tbsp sugar
1/4 tsp salt
1/2 tsp pepper
2 tsp dried basil
1 tsp dried oregano

Chop tomatoes to desired consistency in a food processor or blender. Add the other vegatables one at a time, and continue to chop to desired consistency. Transfer mixture to a stockpot, add sugar and other seasonings, then heat to boiling. Reduce heat, and continue to simmer uncovered 15 minutes. This soup can be frozen in plastic or glass containers.

Serving size - 1 cup. Calories: 32 Fat: 0g Cholesterol: 0mg Sodium: 84mg

I loved the Graham crackers and cool whip. I also enjoyed the Key Lime pie. However, I'm not a fan of the whoopie cookies. I probably made them a little too big, but without the marshmallow they don't have much flavor. They also are kind of a dry cookie and I like real moist gooey cookies. Of course that is all the fattening stuff right? :)

Dw will have to correct me on this, but one of the things she makes that is simple and good is to take some chocolate pudding and combine it with the fat free Cool Whip for chocoalate mousse!

They have a recipe on the lowfat graham crust (which I bought for the key lime pie!) which has a chocolate pie recipe with fat free choc. pudding. I plan on trying that one out, and I'll let ya' know what I think!

I have a yummy recipe for a chocolate pie that I think could be made with all low fat or fat free ingredients.

Chiffon Chocolate Pie :drool:
1 small box vanilla instant pudding (dry)
1 small box chocolate instant pudding (dry)
2 cups milk
2 cups vanilla ice cream

Mix together and pour into graham cracker crust. Refrigerate. Cover with cool whip. Can also add chocolate shavings to the top.
