I am hosting a baby shower on Saturday. Another gal and I are working on this together. I am doing all the food stuff. I am making finger sandwiches. Pimento cheese and chicken salad.
I usually use a pretty basic recipe. Chicken, miracle whip, pickles, and pepper.
I thought y'all might have some better recipes to make it more special.
Care to share anyone? I am going to use cookie cutters and make cute shapes. I will also use wheat and white breads.
Any other ideas out there???

Chicken Salad With Garlic-Ginger Mayonnaise & Almonds
3/4 cup blanched slivered almonds
1 teaspoon vegetable oil
1/3 cup + 2 tablespoons mayonnaise
2 1/2 teaspoons lime juice
2 large cloves garlic, chopped finely
1 3/4 teaspoons grated, fresh ginger or 1/2 teaspoon powdered ginger
2 teaspoon salt
3 cups cooked, cubed chicken
6 green onions, sliced
2 stalks celery, sliced
1 small carrot, quartered and sliced thinly
1 medium zucchini, quartered and sliced thinly
2 tablespoons chopped, fresh parsley
Sauté almonds in oil until golden; reserve. In large bowl, combine mayonnaise, lime juice, garlic, ginger, and salt. Add chicken, green onions, celery, carrots, and zucchini. Fold in parsley and almonds.
I put chicken salad on a slice of party rye and party pumpernickle and arrange the sandwiches around a cake plate in an alternating pattern then put leaf lettuce in the center with garnish of parsley and chopped red peppers. It makes a pretty wreath effect. Pumpernickle is really a dry bread though and some people don't like that.

I have a hot chicken salad recipe if you are interested in that. I think it's basically the chicken mixed with cream of chicken and mushroom soup & Velveeta cheese.
