View Full Version : Artery-clogging Au Gratin Potatoes!

OMG, it's not often I succeed at "making up" my own recipe, but I've made these about 3 times in the last week! Can't get enough!!!

8-10 small/medium red potatoes, cut into thin slices, then quartered
3 tbsp. butter, melted
1/2 cup shredded cheddar cheese
1/2 cup shredded parmesan cheese
1/2 cup milk
onion and garlic powder, salt and pepper to taste
appox. 4 thick slices Velveeta, quartered

Grease a 9x13" casserole dish, spread potatoes on bottom. Drizzle melted butter over potatoes. Mix milk, cheddar cheese, parmesan cheese and spices, pour over potatoes. Place Velveeta cubes on top.
Bake at 425º for 40 minutes.

Hee hee hee!! It's pretty much non-existant! Can't you tell?!! Hey, I do use skim milk in the recipe... that counts for something!!! ;)

Well, excuuuuuuuse me!! :lol: I had it, so I used it! I suppose you could substitute another type of shredded cheese, Colby/Jack.... but, it just won't be the same!!!!!!

Without a doubt potatoes are my favorite food. If you even call it a potato I will eat eat. Here's a reduced calorie recipe for Cheesy Scalloped Potatoes that my family loves.

1 1/2 cups skim milk
2 TBLS all-purpose flour
1/2 tsp salt
1/8 tsp pepper
1/8 tsp garlic powder
1/2 cup chopped onion
4 med. potatoes peeled and thinly sliced
1/2 cup shredded Colby/Jack cheese
Snipped fresh parsley

In sacuepan combine milk, flour, salt, pepper, garlic powder and cook and stir over med. heat till thickened and bubbly. Stir in onion. Spray a casserole with Pam. Put in half of potatoes, half of sauce then repeat layers. Bake, covered at 350 till potatoes are tender. Remove from oven and sprinkle with cheese. Cover till cheese melts then garnish with parsley.

Definitely go with Kat's recipe... mine is NOWHERE near the allowable WW points range!!!!

So, I've got a total of 46 points for the total recipe - now, how many
should ;) it feed???

LMAO :lol: Like I said, go with Kat's recipe!!! One note, though... I do use skim milk.... so, there's one point you can subtract!!! :biglaugh:

It should feed a family of 4 with a few leftovers... but once I get started....well, you can imagine!! (come on Pilates tapes!)
