There was recipe posted on this site 2 years ago for banana bread. It was a real simple recipe that did NOT call for milk. It stared out "2 or 3 ripe bananas, the blacker the better"
Well I loved that recipe but somehow I lost it. :banghead: I even pulled my stove out looking for it.
Anyone know what recipe I'm talking about? Anyone have a good, simple recipe for banana bread?

Banana Breads
One
3½ cups flour
3 tsp baking powder
1 tsp salt
1 tsp baking soda
¾ cup shortening
1½ cups sugar (or 1 cup sugar + ½ cup brown sugar)
3 eggs
1 tsp vanilla
¾ cup yogurt
2 cups mashed bananas
2 tbsp lemon juice
1 cup finely chopped walnuts
Sift together the flour, baking powder, salt and baking soda. Set aside.
Cream until fluffy (about 4 minutes): shortening, sugar, eggs and vanilla.
Add the yogurt and flour mixture alternately to creamed shortening. Beat after each addition.
Fold in mashed bananas mixed with lemon juice and walnuts.
Pour into 2 9x5 inch loaf pans and bake in preheated 350° oven for 1 - 1¼ hour, or until tester comes out clean.

Two
1 stick unsalted butter, softened
1 cup sugar
2 large eggs
1/3 cup buttermilk at room temperature
1 1/4 cup mashed bananas
1 tsp. vanilla extract
2 cups sifted bleached flour
1 tsp. baking soda
3/4 tsp. salt
3/4 cup chopped walnuts
Preheat oven to 350°F. Grease and flour a 9x5-inch loaf pan.
In a medium mixing bowl, cream the butter and sugar until light and fluffy. Beat in aggs. Stir in the buttermilk, mashed bananas and vanilla.
In a medium bowl, sift together the sifted flour, baking soda and salt. Add the dry ingredients to the banana mixture, stirring well until combined. Stir in the walnuts.
Pour the batter into the pan and smooth the top.
Bake for about one hour, or until a toothpick inserted near the corner comes out clean. Cool in pan for ten minutes, remove from pan and cool on rack. Wrap tightly.

Three
1 3/4 cup all purpose flour
2/3 cup sugar
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. baking soda
1/2 cup butter, softened
2 cups mashed bananas
1/2 cup chopped pecans
1 tsp. grated lemon peal
2 eggs, slightly beaten
Mix first five ingredients in a large bowl with a fork. Cut in butter until mixture resembles coarse crumbs. With a fork, stir bananas, pecans, lemon peel and eggs into flour mixture just until flour is moistened. Spoon batter into greased 9x5-inch loaf pan. Bake in preheated 350°F oven for about 55 minutes. Cool in pan on wire rack for ten minutes, then remove from pan
3 small 2 large bananas (the blacker the better)
1 1/2 C. Flour
1 Tsp. bakingsoda
pinch salt
2 eggs
1 Tbs. Shortening/butter/or Yes applesauce
1 C. White sugar
Mash Banana & mix all ingredients together. pour into greased and foured loaf pan.....bake 1 hour in preheated oven at 300 degrees. Yummy

Renee, that was the recipe I pulled the stove out trying to find but I'll have to give Diane's fancy recipes a try too
all this talk of banana bread is making me hungry...and all I have is yellow bananas :lol:
