1 1/4 cup flour
1 cup sugar
1/4 cup cocoa
1/4 cup butter/marg. softened
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 egg
1 tsp vanilla
1 cup hot water
Preheat oven to 350*. Mix ingredients in order given...beat until smooth. Pour into a greased 8 or 9 " pan. Bake 30 - 40 min.
I always double the recipe. I either use a 9 x 13 pan or two round layer cake pans.
Icing....
2 1/2 cups icing sugar
1/2 cocoa
6 tbsp butter/marg softened
1/4 cup water
1 tsp vanilla
Mix all ingredients together until smooth.
I find it too runny sometimes, so I either add a bit more icing sugar or some flour to get it to the consistency that I need.
