We are having pork roast (Angie's recipe but I use applesauce instead of cranberry..less sugar!), brown rice and veggies.

For my luncheon meeting today, I am supplying the lettuce and everyone is bringing their favorite addition to put in...should be fun to see what all goes in the salad!

We're doing steaks on the grill, new potatoes with butter and chives, sweet corn and grape salad.

The corn, potatoes and chives are all fresh from our garden.

Thinking about making potato soup and ham sandwiches, but tonight is the night we bring take out to church before class. It will all depend on how tired I am by the time I get home.

Renee, the salad turned out so good! Besides the lettuce, there were carrots, avocado, sweet red peppers, grape tomatoes, artichoke hearts, smoked almonds and tuna all tossed in an Italian dressing....yum!!!

Yum... Sounds pretty good, except for the artichoke hearts??? ugh!!! I shouldn't say that because I've never actually tried them but... they don't sound very appetizing. LOL Good idea for a luncheon though. :)

Diane, my KIDS like artichoke hearts..you can too!!!

Steamed whole ones with lemon butter are to die for, and they are a must in our salad. Hot artichoke dip is pretty yummy too!

I went ahead and made the potato soup and it was really good. I couldn't find the recipe I'd taken from this forum so I just improvised. I chopped some onion and celery and sauted in 2 tbls of butter. Cut up 5 potaoes and just a little bit of chopped carrot for color, and boiled in 1 can of chicken broth and 1 can of water till cooked. I added salt, pepper and a little garlic powder to taste. Added 1 can of cream of chicken soup and about a dozen cheddar & jack cheese cubes. Topped with green onion and crumbled bacon.

I plan on taking the leftovers for lunch tomorrow.
