I failed my glucose tolerance test yesterday so it's official that I have gestational diabetes. I'm needing some low starch veggie ideas to help me over the next couple of months. My favs are all the ones I shouldn't have now, of course! :P

Sorry about the diappointing health news. :(

Egg Plant Parmazon comes to mind but I don't know if it's low in starch. Which kind of vegi's does your dr. recomend?

Sorry Pam.

Not sure what veggies are low starch....I'm thinking lettuce, cucumber, peppers, eggplant, zucchini, mushrooms, cauliflower and broccoli are low starch. I think the higher starch ones would be corn and carrots. What did your doctor suggest?

I follow a low glycemic way of eating. The no no's are potatoes, corn, beets, any veggie with breading. You need to watch your processed wheats too.
Good ones are all the green ones, squash, carrots are ok.

The doctor's office is sending me (eventually) to a dietician who will give me all the info I need. I'd rather just get the info online, lol, and skip another appointment, but it may not work that way. This morning my fasting level was too high, so I'm hoping that's not an indicator that insulin will be needed! :(

Thanks, Ann! Those are great sites, the second one is especially interesting. Definite food for thought there. I've heard of high vs. low glycemic index foods but don't have a real great handle on what's what beyond the basics, the ones you mentioned. Is there an actual food list that categorizes foods? Online would be great or if you have a book you could recommend. Does the book Sugar Busters have a list?

the lower the glycemic index of a food is the lower the insulin response is (it doesn't raise your insulin eating that food).

Sugar Busters puts out a shopper's guide that you can get at WalMart that lists brand names.
