Decided I would surprise dd at dinner today and make one of her favourites that I haven't made in a long time, Potato pancakes.
Was just curious if this is something any of you ever make? Not very many people that I know have ever heard of them, yet it was one of things my mom made quite often.

If your interested its just shredded raw potato mixed with an egg, milk, a little flour and salt and pepper, then fried. We eat them with sour cream over top. For variety my mom would quite often make cucumbers in cream for over top or slice boiled eggs into the cream.

We have them for breakfast the day after Thanksgiving, but do them a little differently. We take the leftover mashed potatoes, form them into a patty and then fry them.

My mother also made a breakfast pancake out of leftover mashed potatoes but if memory serves me right it was made into a dough that was rolled out then fried.

I love them....my dad used to make them all the time as kids...he actually made them last week.

But he does them alittle different to....he blends the potatos in the blender and mixes it with the other stuff...then cooks them like regular pancakes on the griddle.

Ive also had potato latkas (sp?) which are the shedded potatos and they are fried....I really loved those. Whick come to think of was how they were cooked when I ordered potato pancakes in a german restaurant once. so I guess it's depends on your background. Either way I love them.
