I always buy the box mix at the store. Do you carry Duncan Hines or Pillsbury cake mixes at the store? I'm too lazy of a baker to start from scratch. LOL Sorry if that doesn't help!

I used to only bake from scratch -- now I have neither the time nor the inclination ... but, here is a recipe I used to make all the time. It is from "The Total Woman Cookbook" -- from around 1980 or so ...

In small saucepan over low heat, melt together 1/4 cup of margarine, 1/3 cup of oil, and 3 or 4 squares of unsweetened chocolate. When melted, remove from heat.

In a large bowl beat 4 eggs and a pinch of salt. Gradually beat in two cups of sugar -- about 1/2 cup at a time.

Stir chocolate mixture into egg mixture. Blend thoroughly.

Stir in 1 cup of all purpose flour and 1 teaspoon of vanilla flavoring.

Pour into a grease 13 x 9 inch cake pan. Bake at 350 degrees F for 30 minutes or so, until done.

We usually have Betty Crocker brand brownies at our house because they come in a 13 x 9 pan size, but sometimes I will use two boxes of Pillsbury branch for the 8 x 8 size, but bake them in a 13 x 9 pan. Makes extra thick brownies.

Yum! Yum!! Brownies sound so good!!

I typically make brownies from scratch, although since I've been working so much boxed brownies is the best the family has gotten lately.

Here's three of my favorite recipes:

Hershey's Best Brownies
Microwave 2 sticks of butter or margarine for 2 1/2 minutes.
Stir in 2 cups of sugar and 2 teaspoons of vanilla.
Add 4 eggs, 3/4 cup baking cocoa (the recipe recommends Hershey's brand), 1 Cup flour
1/2 tsp. baking powder
1/4 tsp. salt.
Pour in a pan and bake 30-35 minutes at 350 degrees. Sprinkle with powdered sugar after removing from oven.

Chocolate Pudding Brownies

Combine 1/2 cup flour
1-4 oz. pkg. chocolate pudding
1/2 tsp. baking powder
1/3 tsp. salt

In a separate large bowl cream together
6 Tablespoons shortening (Like Crisco)
2/3 C. sugar
Beat in 2 eggs
1/4 cup milk
1 tsp. vanilla

Add flour and pudding mixture
Pour in pan. Bake 25-30 min.
Sprinkle with powdered sugar

Speedy Brownies

2 C. sugar
1 3/4 C. flour
1/2 C. baking cocoa
1 tsp. salt
5 eggs
1 C. vegetable oil
1 tsp. vanilla

Mix together and pour in 13 x 9 inch pan. Sprinkle with 1 C chocolate chips. Bake 30-35 minutes.

Hope these are helpful!! enjoy!!
