My meal planning has really sucked lately, need to get better organized. I did manage to put a roast in the crockpot this morning with potatoes and turnip, so probably a salad along with that.

Ann I know you have posted this before but how do you make cheater enchiladas?

we are doing a Big salad...grilled chicken breasts and basmati rice....:licklips:

Instead of rolling them, you just stack them. Here's my very nonimagnitive recipe

Mix together one large can of chili no beans with a can of rotel tomatoes, simmer for about 10 minutes.
Layer like you would a lasagna
sauce
tortillas (I used whole wheat)
grated cheese
tortillas
sauce
tortillas
cheese

cover and bake at 350 for about an hour.
I usually put it together earlier in the day.

Hey I can use this with just Refried bean instead of the chili....dh would surely like that...;) its imaginative to me...thanks for the recipe Ann....:drool:

Renee...you could try vegetarian chili too. If you were going to use refrieds, I would mix maybe two cans of rotel in with them..you need it fairly liquid....like a sauce, maybe had a can of tomato sauce. You could also use black beans.

I have that recipe, but mine calls for

1 lbs of browned ground beef w/ onions
1 can of enchilida sauce
1 can of cream of mushroom soup
1 can of ranch style beans.


Layer just like AnnW. Very good and easy!!

I have chicken thighs out for dinner and will likely bake them with lemon and garlic.

I actually don't like mushrooms so I substitute cream of celery soup. Yeap!! It tastes good to me!!! The orginal recipe did call for cream of mushrooms.



I just have to have things my way!!!

opps I forgot. I also add chopped green chilies for a kicker.

It's cold outside today so I made a nice hot casserole for tonight. The kids are coming and going at all different times tonight and this way they can heat/eat whenever they get the time. Dh and I have hair appointments tonight too... and this is something quick and easy and definitely not too much as far as pick up...

I have been lazy in the cooking department lately....:(

Here it is 12:43pm and I havent even decided on anything yet, I better get thinking I guess...DS#2 has hockey till 4:45 so it will have to be something quick to make when we get home. If I was on the ball I should have stuck something in the crock pot...Oh well... Something will come in mind soon I'm sure...

I have been a slacker lately and just done simple boring stuff. :\ Tonight we are having hot chicken "salad" on croissants with cantelope, carrots, celery and dip. For dessert it's fruit pizza. :)

Wow, I haven't been here in a long time. We're having white chili and biscuits. It's cold and rainy here so it's sounding really good.

I have a roast in the crock pot. I'm going to make BBQ beef sandwiches and a salad. I'm taking the same thing over to my friend's house. I'm also making her a dessert to go with it. I had planned on making homemade chicken potpie for my friend- but I found out this morning that's what she had last night!

It's been crazy around here- yes, we've been eating, but I haven't had a lot of time to post.

White chili has a chicken stock base with cream, chicken, carrots, jalepenos, beans, and some seasonings. It's not a very low-fat low-calorie meal so we only make it now and again. I was making dinner for my neighbor who had surgery last week and she really likes it so I made a big pot, enough for her and me.

Leftover Roast Beef....mashed potatoes (also left over) and corn.

Really lazy in the kitchen this week!!!!!

We had white chili the other night. I love it. Ann I use a pkg of Williams Chicken White Bean Chili Seasoning add to it:
Chicken stock
a pound of diced cooked chicken
a can of great northern beans
a can of white corn
a can of green chilies
Top with jack cheese

Tonight we had left over roast shredded with gravy, mushrooms and sour cream over noodles, salad, and green peas. Forgot the bread till I was putting dinner on the table. Amish friendship bread for dessert.

White Chicken Chili

1/2 gallon of water
1 1/2 lbs chicken breast(skinned and trimmed)
2 jalepenos lightly roasted
1/2 cup carrots finely diced
1 small can of diced green chili peppers
4 Tbsp chicken stock base
1 1/3 tsp ground cumin
1 1/2 Tbsp Montreal Chicken seasoning
1/2 tsp white pepper
3 cans of great northern beans
2 3/4 cups heavy whipping cream
5 oz butter
1 1/4 cups flour


Place chicken breasts and water in a 6 qrt pot. poach breasts gently until cooked through. remove meat and set aside.(keep the water)
Roast jalepenos until the skin crinkles. Remove the stem and finely dice the rest, seeds and all
Add jalepenos, carrots, stock base, green chilis, and seasonings to the water. Bring to a simmer
Add whipping cream and return to a simmer.
Meanwhile melt the butter sprinkle in the flour and cook until a light toasty brown.
Dice the chicken and add to the stock
Add the butter /flour mixture to the stock
Stir well and cook for at least 4 minutes at a light simmer
Add the beans
Adjust the seasonings, adding salt and pepper to taste.

Makes 14 12 oz bowls

Yum! Sheryl yours sounds really good. Creamier than my version. I might whip that up for a crowd.
