Do you have any good Easter recipes to share?? We are having about 30 people over? I am pretty sure that ham will be the center of it all.

I am having about 30 over also. We don't fix ham cause no one really likes it! LOL
I am doing several briskets, we are also having a hot chicken pasta dish, cole slaw, potato salad, fruit salad, green salad and marinated vegetables.

My family loves this mashed potato casserole recipe. It's best with ham. It has instant potatoes in it (which usually I can't stand) but you can't even tell.

Mashed Potato Casserole

Prepare the day before

12 serving instant potatoes (mix as directed 2 T less milk)
add 1 cup sour cream
2 - 3oz packages cream cheese
2 tsp onion salt
2 T butter

Beat well and store in fridge. Bake uncovered in 9x13 dish at 350 degrees for 30-40 minutes. Sprinkle with paprika and parsley flakes if desired.

Serves six

Would you mind sharing your recipe for vegetable marinade? I'm still in search of one. :0)

Cut up carrots, brocolli, zuchini, squash, mushrooms, artichoke hearts (really, whatever veggies you like..these are my favs), blanche if you want. Mix in a bowl with enough Wishbone Italian dressing to just cover and coat well. Refridge for at least 24 hours. Toss in grated parmesean right before serving.

That's all I do are easy ones!! My aunt asked what to bring (I gave everyone assignments) and I told her marinated vegetables and she didn't have a recipe either, so I gave her this one..at least I won't have to fix it!! LOL

Does anybody have any good idea's as to what I could bring to my sisters house for dinner? She's having ham. She told me to bring whatever I want and I ALWAYS bring something like deviled eggs... which I still plan on bringing, but I'd like to bring something else too. Any idea's would really be appreciated. :)

Do you want to bring a hot dish? Scallopped potatoes or a creamed spinach and artichoke casserole would be nice with ham. If you want to do cold, how about a pasta salad or potato salad?

That's the thing... she's already got mashed potato's... nobody (except me) likes spinach, so I don't think they'd like the creamed spinach and I can't picture anybody eating artichoke ANYTHING... is it good? Never have tried it before. My family has some pretty picky eaters. LOL Maybe some kind of a pasta or potato salad would be good. :) Thanks!

Well, it's a creamed spinach AND artichoke casserole..so that really wouldn't work! LOL

Baked beans, fruit, green salad, dessert???
This is a pretty easy pasta salad...cook corkscrew pasta till al dente, cool. Toss with Paul Newman's Italian dressing. Add chopped black olives, grated cheddar cheese. Chill...you can also add grated carrots, chopped brocolli whatever veggie you want.
Do they like black beans? I have a good black bean and corn dish that is cold.
How about an appetizer?

1 can cream of mushroom soup
1c mayo
1 clove pressed garlic
1/4t pepper
2c shredded cheddar cheese
3 pkg (16oz each) frozen broccoli, carrot & cauliflower mixture (or whatever veggies you like)
1 can (2.8 oz) french fried onion rings

Preheat oven to 350. Combine soup, mayo, garlic and pepper in a bowl and mix well. Stir in cheese. Place veggies in a 9 x 13 casserole dish. Spoon soup mixture over veggies and stir to coat them evenly. Bake 35-40 minutes. Remove from oven and sprinkle fried onions on top. Return to oven for 5 minutes or until onions are golden.

Serves 12

I have a recipe for :snickers: Salad that is really yummy and easy to make. Let me know if you want it - it's got :snickers: and Granny Smith apples in it. :licklips: Actually, I'll post it in a little bit just in case you want it because I don't know if/when I'll get back on here today.

I haven't really decided what I am going to fix for Easter. I know that I will fix a ham, but I am not sure if I will fix mashed potatoes or a broccoli and rice casserole. Dh and I will be celebrating alone, so there is no need for both. He likes both, but thinks that he has to have mashed potatoes for every holiday, so that is probably what I will wind up making. Along with green beans and corn. I might even bake some rolls. LOL!!
