Said I never would, but for whatever strange reason I am looking forward to this little project. If I do have an extensive list seeveral items may be marked out in any given week.

Thanks for the additional ideas!

Thanks for the ideas. I think I will try the omelet ingredients in a tortilla for myself tommorrow. I have a red pepper and part of an onion calling my name.

ROFL!! I'm with Ann! I never said I served this stuff! Darlene, just to give you an idea of how much I refer to my list.... my mom brought muffins over this morning and my 6yo dd said "Oh, thank you Grandma, you saved us from cereal!" 8o  I do have oatmeal soaking for tomorrow morning so maybe that will be something different enough. (Soaking oatmeal sounds weird, but you take whole oats and cover them with cold water and let set overnight. In the morning you just heat each individual serving in the microwave. It tastes sooo much better, imo, than cooking it on the stove.)

Jeff, I've never actually made the breakfast burritos myself but we have a little restaurant in the city that makes killer ones! Let me know how yours turns out.

What about a post for lunch ideas?

It turned out ok, but I need to work on it. Don't think the peppers were done enough, I served it too hot, and I definitely need to add some spices. Instead of cheese perhaps a cream sauce would be better.

We have migas alot, in fact, that is our Christmas morning breakfast is migas.

Here's what we do....saute some pico de gallo till limp, drain well and set aside. Scramble eggs, add in pico and cheese in the last 2 or 3 minutes..serve with hot tortillas and salsa.
