Diane and anyone else...
I need some new menu ideas. I follow the USDA guidelines and serve breakfast, lunch and only afternoon snack. I always seem to make the same things over and over again. I'd like to add some different things. What types of things do you serve?

I don't know what the USDA guidelines are, but maybe this site will help. :)

Breakfast idea's:

Milk, Oranges, Toast

or I'll serve the same thing the next day but serving a different fruit.

Milk. Blueberries, Pancakes (or Waffles)
Milk, 100% Juice, Pancakes rolled around a Sausage Link
Milk, Strawberries, French Toast
Milk, Applesauce, French Toast Sticks
Milk, Peaches, Eggs in a Nest (Toast)
Milk, Apple Slices, Waffles
Milk, Grapes, Cornbread with Honey
Milk, Cantaloupe, Toast, Scrambled Eggs
Milk, Peaches, Croissants
Milk, Cantaloupe, Toast/Peanut Butter
Milk, Peaches, Banana Bread
Milk, Cantaloupe (or any other kind of fruit) Muffin
Milk, Banana, Elephant Toast
ELEPHANT TOAST:
1 small banana = trunk
1 hard cooked egg, quartered (yoke removed) = tusks
2 grapes= eyes
1 slice of toast = ears

Cut the toast in half and place on the plate at angles. Lay banana down center for trunk. Add eyes and tusks.

Lunch Idea's:
Milk, Chicken Salad Sandwiches (Bun), Carrot/Celery sticks
Apples
Milk, Sliced Turkey Sandwiches (on bread), French Fries, Apples
Milk, Fish Sticks, Tator Tots, Lettuce Salad, Bread
Milk, Fish Nuggets, Baked Beans, Corn, Roll
Milk, Fish Pattie Sandwich, French Fries, Fruit ****tail, Bun
Milk, Tuna Salad Sandwich, Baked Beans, Carrot Sticks, Bread
Milk, Tuna Hotidsh Noodles for your bread, Peas/Celery/Onions) Apple Slices
Milk, Grilled Cheese Sandwich (American Cheese), Tomato Soup, Peaches with Cottage Cheese, Bread
Milk, HM Macaroni and Cheese, Green Beans, Carrot Sticks with Peanut Butter dip. (Macaroni Noodles = Bread & Cheese/Peanut butter = Meat)
Milk, Peanut Butter Sandwich + Cottage Cheese, Peaches/Banana's, Bread
Milk, Ham/Cheese Sandwich, Green Beans, Fruit ****tail in Jello, Bread
Milk, Scrambled Eggs, Hashbrowns, Orange Wedges, Toast
Milk, Pizza (Make sure it's got enough meat to = meat requirement) French Fries, Applesauce (Crust = bread requirement)
Milk, Chicken Noodle Soup (Chicken = Meat requirement) Carrots/Celery/Peas = Vegetable requirement) Noodles = Bread requirement) Grapes
Milk, PB/Cheese Sticks, Celery Sticks, Pineapple, Top Ramen Noodles
Milk, Hamburger (on bun), Carrot Sticks, Apple Slices
Milk, Turkey, Mashed Potatoes, Cranberry Sauce, Stuffing
Milk, Hot Dog on bun, Tator Tots (or French Fries) Applesauce


Snack Idea's:
100% Apple Juice Carrot/Celery Sticks, Cottage Cheese Dip
Cottage Cheese Dip Recipe...
1 Cup of low-fat cottage cheese
1 Tbsp. lemon juice
2 Tbsp. skim milk

Process cottage cheese and lemon juice in food processor or blender. Add skim milk to desired consistency.

Milk, Banana Bread
Milk, Pizza Bubbles, (recipe below)

1 can of refridgerator biscuits (10 to a can)
1/2 c. tomato sauce or spaghetti sauce
1/3 c shredded Mozzarella cheese

Separate biscuits... Cut each biscuit into four pieces (40 pieces). Dip each biscuit pieceinto sauce and place in a non-stick 10" skillet. Continue until all of the pieces of buscuits are used. Sprinkle shredded cheese on top. Preheat burner. Cover and cook on top of stove. Use low heat - about 10 minutes. You can add other pizza ingredients, such as onions, mushrooms, ham, etc. to the bubble before cooking. Serve Warm... Yields 20 servince.

Dole Cheery Juice, Bran Muffin
Milk, Frozen Orange Slices (recipe below)
1 small orange = 1/2 c. fruit
Cinnamon/sugar mixture

Peel orange, slice and lay on a cookie sheet. Sprinkle with cinnamon/sugar mixture. Freeze for at least 1 hour.

Saltine Crackers, Grapes
Chocolate Milk, Bananas
100% Graps Juice, English Muffin
Milk, Banana = Peanut Butter
Milk, Fruit ****tail
Milk, Ants on a log (celery/raisins/p.b.)
Milk, Bananas
Applesauce, Graham Crackers
Milk, French Fries
100% Grape Juice, Yogurt
American Cheese Slices, Ritz Crackers
Milk, Peanut Butter Sandwich
Hard Cooked Egg, Toast (Juice optional)
100% Orange Juice, String Cheese
100% Apple Juice, Fish Crackers
100% Apple Juice, Wheat Thins
Milk, Cinnamon Toast
Milk, Cheese Toast
100% Juice, French Toast Sticks
100% Grape Juice, Cheez-It Crackers
100% Orange Juice, Hi Ho Crackers + Peanut Butter
Apple Quarters, American Cheese Slices
Milk, Apple Slices dipped in Caramel Sauce
100% Apple Juice, Ritz Crackers w/ Cottage Cheese
Milk, Yogurt
Frozen Applesauce Pops, Chees-It Crackers
Fruit Kabobs (pineapple, banana, pears, cherry), Cheddar Cheese Cubes

Just curious so you serve your DCK's Breakfast, lunch and snacks all the time...

Here is Canada we have a choice..We can serve lunch or they bring their own....And as far as I know most Daycares dont serve breakfast...

We all serve snacks though...

We don't HAVE to serve breakfast, lunch or a snack if we don't want to but I think I'd have a very hard time getting any children into my day care if these things weren't offered. I serve a breakfast to all children who want/need it and only if they are here by 8:00. I also provide their lunch and an afternoon snack. That's probably why we end up going out to eat supper so much. LOL By the time all the kids get picked up and taken home, I'm SO sick of being in my kitchen and cooking/cleaning I'm just not in the mood to even want to think about what I'm going to make for supper. LOL

I used to serve breakfast, morning snack, lunch and afternoon snack. I finally just decided to serve breakfast later and lunch earlier thus cutting out the morning snack. I don't get reimbursed close to the amount of $ I spend on food so why continue to spend the $ when I didn't have to. Because I am licensed by the military I have a lot of rules and regulations that I wouldn't have if I were licensed by the state. We can't have parents bring any food into our home other than treats for a party. I am responsible for providing all food for all my children.
