I teach first grade and I'm looking for ideas, resources, strategies, or anything that would help be meet this objective in my math instruction.

The objective is: Displaying sensitivity to language and cultural differences.

This could encompass anything from socio-economic status, different languages, which I have none, social groups, etc.

What are some activities or ideas that I might use that are sensitive to language and cultural differences in my classroom during math instruction?

Wow! To combine that objective with math?? The only thing I can think of is to try to bring in different foreign currencies. Talk about the value against the dollar (at a first grade level???) and maybe the countries from which the currency comes? Maybe what the people might buy with their money, and how that differs from here. It's that type of thing that makes me shy away from unit studies in homeschool... tying it all together seems like a stretch sometimes! :)
